Quick courgette lasagne

This comforting midweek meal is on the table in under an hour, and it's sure to keep veggies and meat-eaters happy

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Heat 1 tbsp olive oil in a pan. Cook the courgette, garlic and chilli until soft. Add the ricotta and 2 tbsp of parmesan, season and mix well.
  2. Put a layer of the mix in the bottom of a small dish. Add a quarter of the sauce then cover with 2 sheets of lasagne. Repeat twice, ending with lasagne. Spoon over the last 1/4 of tomato sauce and sprinkle over the Parmesan. Bake for 20-30 minutes until bubbling.

    I know this isnt supposed to contain any meat but i think id be tempted to layer up some ham in this, as the BF does like meat as do I. It does sound lovely. Ive tried the Cheese and Bacon lasagne a few times on this site and it alweays comes out perfect. Its nice to have a variation on the usual lasagne.x

    I am adding smoked bacon when I make this tonight for a bit of extra flavour. Lindsay - the tomato sauce is added at the layering stage just before the lasagne sheets.

    Being a vege I loved this recipe, it was really quick to prepare, I didn't have any ricotta, so used half fat creme freche which seemed to work just as well. I will make this again, but I'm going to add more grated courgette next time.

    This is very good. Quick to make and very tasty. I added an extra garlic clove to add more flavour. A very good way of disguising courgettes for those courgette haters out there.

    I added some lemon zest to the courgette/ricotta mix plus a layer of sauted mushrooms to make it go further - it was delicious, a lovely summery recipe.

    I made this to-night for our evening meal. It was very easy to do and very tasty. Although the recipe said it was for two it would easily feed 3 and maybe 4. I didn`t use fresh pasta but next time I do this I will do so. It tasted much lighter than traditional lasagne. I expect it was due to the ricotta cheese rather than traditional cheese sauce. I might also try it with the addition of bacon although it is very tasty without. I shall certainly make it for my daughter and family when they come, as they are veggies.

    I used a smaller oval shaped dish and found that I could get away with just 2 layers of pasta (which was useful as I only had small courgettes which didn't make a great deal of filling!) I also used some cheddar rather than parmesan. Pleasantly surprised with this recipe :)

    I followed the recipe in the Olive magasine which was very straightforward and problem free (see other comments for confusion over online version). I love this recipe and have made it for friends. At least 3 people have since come back and asked for the recipe - praise indeed!

    I made a slight change to the pasta sauce using arrabbiata instead. It was simply the best dish we had tried.The courgettes came from our allotment,they were quite big but still absolutely fantastic.We gave this dish full marks and would like to know wether it can be frozen as we dont want to waste any of this delicious food.Thanks for the recipe .Dandandino

    Thank god for Good Food! Our family have grown too many Courgettes and were running out of ideas of what to do with them. This was fabulous- but I do admit to adding smoked bacon, onions and extra garlic into the courgette mixture. Plus the bonus was - an empty plate from my ten year old son who loathes courgettes , apparently :-) Loved it- will be doing again most definitely.

    Don't make the mistake I did and use dried lasagne, if you're going to be putting two sheets on at a time. I did and they didn't cook (probably unsurprisingly to most people!) but the next time I made it, I only used one sheet and it was perfect.
