Swede & bacon pies

Swede and bacon were made for each other, so putting them together in a pie gives swede a starring role for once

Method

  1. Put the bacon in a non-stick pan with 1 tbsp olive oil and brown. Remove, and brown the onions in the same oil. Return the bacon to the pan along with the swede and carrot and season well. Pour in the chicken stock, cover and cook for 5 minutes or until the veg is tender. Stir in the parsley. Divide between 4 individual pie dishes. Keep warm.
  2. Meanwhile, cook the potatoes in boiling water until just tender (about 8 minutes). Drain and cool, then mash. Spoon onto the swede mixture, keeping the potato fluffy, and sprinkle with seasoning. Grill until the potato starts to brown.

    Delicious - although I steamed the carrots and swede together beforehand to make sure they were thoroughly cooked. Combined ingredients together with a little flour and the stock. Really tasty easy meal, and will certainly have it again.

    I used vegetable stock instead of chicken stock,and after dividing between 4 individual pie dishes there were some stock left in the pan,so I had them as soup.It was so delicious.

    I used Ramekin dishes for the individual portions and thought that they would be too small - but all the mixture fit between 4 dishes and the potatoe was piled on top. Was a tasty, homely dish and I was suprised how filling one serving was. Def will make again.

    This was delicious! I halved the recipe and it was lovely. I don't like mashed potato so I boiled chunks of potato and topped it with a bit of cheddar. Lovely!!

    I used leek instead of onion and smoked bacon and it came out really well. I would recommend pre cooking the swede. Works fine as one 1 big pie (I don't have any individual ones).

    Really enjoyed this! I sliced the potato and roasted with some thyme, then layered the mixture between potato slices. Will def be making this again!

    This makes a nice change from shepherds pie - it's a real comfort dish. I think 30 mins is a bit of an underestimate for timings, so make sure you've got a bit longer.

    I don't like swede, so was looking for a recipe that would change my opinion of it - this is it! I boiled the swede and carrots on the hob for a bit longer, until the veg was tender. A very hearty and warming dinner, great for a cold winter's night! There were only 3 of us, so loads left over - stuck it in the blender and made awesome soup!!

    When my lass smelt the pan (before I added the Parsley) she turned her nose up, but 15 minutes and a clean bowl later she was asking if there was more. We both really, really enjoyed this, and I will absolutely be making this again. Perfect winter dish for my tastebuds :)
