  • 1 thinly sliced red onion
  • 2 garlic clove, thinly sliced


  1. Heat oven to 200C/fan 180C/gas 6. Cut the potatoes, skin left on, into fat chips. Toss with the olive oil, plenty of seasoning and the red onion, then tip onto a baking tray. Roast for 15-20 mins.

  2. Turn oven up to 240C/fan 220C/gas 9. Roast for 15-20 mins more, turning and adding the garlic to the tray with 10 mins cooking time to go.

Perfect! I've always hated frying chips...the bubbling hot oil makes me nervous and knowing that it's bad for me detracts from the pleasure of eating those golden fingers of potato! I'll never buy oven chips ever again! The young kids loved it too!

Loved these, went brilliantly with steak. Like others have said, I would put the onions in later as they were charred by the time the chips were cooked, but I would definitely make these again!

Amazing home made chips but I tend to leave the onions till last 15 mins otherwise they are black if u put them in too early in that heat!

Everyone at dinner enjoyed these chips. The insides were floury (like roast potatoes) and the thinly sliced red onion flavour permeated the dish. They went down well with my 2 year old nephew too! I would definately use this recipe again as it is quick and easy to make. Just make sure that after 15 minutes you turn the chips or they will stick to any surface.

I don't bother with the garlic and onion; I make garlic mayo for dipping instead.
Also, try substituting the oil for duck fat, but keep a cloth/napkin to hand to mop up any excess drool.

Absolutely delicious, but I would add the onion a little later.. maybe after around 10 minutes with the garlic otherwise they taste a little overcooked..

Bit annoyed about the cooking time for the chips.....the onion was charcoal by the time the chips were ready....disappointing Mr Ramsey

I have never tried to make chips before as I generally dislike chips as a rule, however I quite enjoyed these due to the additional flavour from the noon and garlic. I intend to make these again but will use far more onion and will not slice it thinly as most of it burned rather than caramelised. Otherwise a nice and relatively quick meal.

I agree with the above comments, I added the onions 10 mins into the cooking time but they were still overcooked & not caramalised, just really crispy. But loved the addition of garlic at the end. Probably won't make again.

These were good, but I wouldn't add the onion until last 20 minutes or so as they were a bit overdone. Otherwise, tasty.

I agree with alot of the other comments onions not need to go in till 10 mins into cooking time. But all the same was very scrumy even for my preggy fiance who is only nibbling at stuff i cook her but she ate all of this. A******

I make this often, but add chopped smoked bacon and lots of black pepper, goes well with cauliflower cheese.

I always add other ingredients about 10 mins after the potatoes, if you add bacon it will take longer,

Also works well with new potatoes.

Agree with others - the onion needn't go in until after first 10 minutes. Also works really well if you combine with sweet potatoes.

Delicious! As I am a Yank, I used Yukon Gold for these and added half a pound of fresh broccoli florets at Step yummy my husband and I ate most of it from the baking sheet before it ever reached our plates.

Grow own potatoes and onions So able to have++ However like Previous comment would not put onions in until last ten minutes....were rather over done...lost the caramelised effect!!

Not bad at all, I already add red onions to my roast pots but I cut them a little thicker and they are lovely and sweet...

Cooking time is confusing me, is it 20 minutes like stated at the top or 40 mins if i fillow the method, 20 minutes and then a further 20 minutes more ?
