Method

  1. Whizz the chickpeas to a dryish paste in a food processor. Add olive oil and lemon juice to taste and a little water if necessary, keep whizzing.
  2. Stir in the spring onions and tomatoes and season well. Dust with paprika and serve with pitta bread.

    The essential missing ingredient in this recipe is tahini-sesame seed paste- without it there is no houmous just mashed chick peas. Add 2 tablespoons of tahini and some crushed garlic..even posher!

    Made this for a BBQ, was ok but did lack a certain something, possibly the lack of garlic? However, it seemed to go down well and none was left so couldn´t have been so disagreeable!

    Made this yesterday with tahini and garlic added. Spread it on a plate and drizzled it with olive oil and chopped parsley and mint mixed as they do in N. Africa....Delicious. I guess its all in your taste buds.......PS my guests were almost licking the plate!!!!

    No Garlic + No Tahini = Not Houmous. This is just mashed chickpeas with veg!

    Baltar is right. Drop the tomatoes and onions (you could make simple salad with these instead)

    Notes add 2 crushed garlic clove add 1 1/2 tbsp tahini or sesame paste tomatoes optional use liquid of peas to smoothen hummus together with 3tbsp olive oil season with lemon juice and salt
