Ingredients

  • sunflower oil
  • 1 large sirloin steak, about 250g, trimmed of all fat and thinly sliced
  • a thumb-sized piece root ginger, finely grated
  • 1 garlic clove, crushed
  • 4 spring onions, sliced
  • 1 tbsp soy sauce
  • 2 pak choi (bok choy), quartered
  • 50g mangetout
  • 1 tsp sesame oil

Method

  1. Heat 1 tbsp oil in a large non-stick wok or frying pan. Add the beef and brown quickly. Add the ginger, garlic and spring onions and cook for 2 minutes, then add the soy.
  2. Steam the pak choy and mangetout until tender then toss with the sesame oil. Serve with the beef.

Easy to follow and with good results. For a slight variation I marinated the strips of beef in the soy sauce, ginger, garlic with added juice of 1/2 a lime and a pinch of sugar while preparing the greens for 15 mins. Steamed Savoy cabbage and pak choy for 5 mins while frying the marinated beef to medium rare - delicious and tender!

I followed Becky C's example and also added some cashews, which was a great move.

However, I wasn't super-keen on the texture of the pak choy, which ended up a bit floopy and chewy.

Flavour of the dish was lovely, though.

absolutely love this, its lovely with broccoli too to fill it out a bit - great for a low carb dinner

Simple food very tasty. Very few calories.
Wiil cook many times in future.
Used a bag of M&S mixed veg/greens.

We both enjoyed it. I thought I might feel hungry shortly after - as sometimes happens with stir fry dishes - but that did not happen.

Tried this with spring greens which we got in our organic box, as I didn't really know what to do with them. Quick and easy to do, worked really well, and persuaded one of our children that greens might be OK. The other one remains unconvinced.
