Three bean, tomato & spinach stew

A hearty bean stew to warm and comfort on a cold, dark night

Method

  1. Cook the onion and garlic in a little olive oil until softened. Add the cumin and cook for a minute. Tip in the tomatoes, plus a cup of water and simmer for 10 minutes, until thickened.
  2. Add all the beans and cook for 5 minutes. Add the spinach and cook for another 5. Serve with crusty brown bread.

    Tasty, cheap and easy meal. I can see why some people feel it's quite bland but i served it with buttery mash and it was delicious. May try adding some chilli next time to give it an extra a kick.

    I cheated a bit and used a can of mixed beans. TThe recipe is a bit bland - for an extra kick, I added a further tsp of cumin powder, some crushed red chilli, extra garlic, salt and pepper. I made the mistake of adding a tsp of chilli powder which made it super spicy and strong! The canned tomatoes were a bit salty so I modified the taste with some sugar.

    Great recipe! I added in baked beans instead, halved the tomato (due to the baked beans!) and doubled the spinach quantity and it turned out gorgeous! Will definitely be making again!

    I didn't have any cumin but instead used some curry powder and added some diced turkey thighes. I really enjoyed this stew, cheap and cheerful! I'm making it again tonight.

    Very tasty and nutritious but added mild chilli powder and some Worcestershire sauce. We had as an evening meal between two of us, might serve 4 as a lunch but portion size would be small. Still less than 300 cals if split between two though :) will be having again.

    This dish is incredibly simple and oh so cheap to make, in short you get exactly as stated. Not one for the dinner parties or for showy culinary skills just pure good food. I thought it was excellent, and I do hear the complaints about a lack of depth in flavour - but this can easily be amended by extra goodness kicking about your spice cupboard! Personally I added a few dried herbs (oregano, basil) and some extra cumin, chili powder... and dare I say curry powder. I also replaced the green beans with broccoli and added some left over chickpeas, serving it on a bed of crushed garlicky potatoes. Was a real winter warmer, perfect for groggy days about the house. This is comfort food at its greatest!

    Easy to follow and quick to both assemble and cook! Having read other comments about depth of flavour I lightly fried 100g of chorizo before adding the onions and garlic to the pan; 1/2 tbsp of smoked paprika also went in with the cummin. Result was lovely, rich and spicey with contrast of textures. Great one for experimenting with what ever you have!

    Lovely recipe but needed a bit more seasoning so I added salt, pepper, turmeric, ginger & paprika plus I added mushrooms and sausages.......putting it all in a casserole dish (covered) for an hour or so. Served with mashed potatoes. Brilliant, v tasty.
