Three bean, tomato & spinach stew

A hearty bean stew to warm and comfort on a cold, dark night

Method

  1. Cook the onion and garlic in a little olive oil until softened. Add the cumin and cook for a minute. Tip in the tomatoes, plus a cup of water and simmer for 10 minutes, until thickened.
  2. Add all the beans and cook for 5 minutes. Add the spinach and cook for another 5. Serve with crusty brown bread.

    Quick and simple to follow recipe. Tasty meal, just one hint keep an eye on the amount of liquid, I didn't end up with so much. Will make again.

    This reminded me of the kind of veggie food from the 70's and early 80's. Wholesome and 'good for you' but not entirely appetising. The tomatoe base made the stew rather viscous and the cumin gave it a rough texture and taste. Will definitely give this one a miss.

    Lovely. There's only two of us and a 10 month baby so froze half the stew to have later, which we did reheated with a mixed potato topping. My daughter really enjoyed it both times.

    Just joined, trying to lose weight following surgery, cooking for one and this was my first recipe. I loved it and yes it does remind one of wholesome 70s veggie food, brilliant. Thanks Freya's Mum for telling us you froze it because now I can cook another recipe tomorrow. Yummy!

    The cumin turned this dish into something special. Found recipe so I could use up a glut of green beans from a friends garden. Definitely needs some crusty bread to soak up the juices!

    I added some chunks of beef to this and it was awesome! Really hearty and healthy, not to mention easy as all get out. It was more than filling enough with a hunk of malty bread. Yum!

    This was fantastic! It was so quick and easy and really healthy. I used frozen spinach, it comes in little portions and I just threw a few in while it was simmering. The ingredients listed was only enough for two portions. I'll definately make it again :)

    a lovely and warming one pot meal. I made it with a 400g tin of mixed beans and served with mashed potato which was very yummy. I would also recommend watching the liquid - it definitely needs more than 1 cup of water to stop it drying out.

    Made this tonight for the first time - really easy, totally delicious and very healthy. Had it with some toasted sourdough rubbed with garlic, and a drizzle of best olive oil on the stew. Lovely!

    A pretty tasteless non-event. I spiced it up a bit the next night with sun-dried tomatoes, tomato paste and curry paste, which made it much more tasty.
