Bobotie

Pronounced ba-boor-tea, the national dish of South Africa is a delicious mixture of curried meat and fruit with a creamy golden topping, not dissimilar to moussaka

Method

  1. Heat oven to 180C/fan 160C/gas 4. Pour cold water over the bread and set aside to soak.
  2. Meanwhile, fry the onions in the butter, stirring regularly for 10 mins until they are soft and starting to colour. Add the garlic and beef and stir well, crushing the mince into fine grains until it changes colour. Stir in the curry paste, herbs, spices, chutney, sultanas and 2 of the bay leaves with 1 tsp salt and plenty of ground black pepper.
  3. Cover and simmer for 10 mins. Squeeze the water from the bread, then beat into the meat mixture until well blended. Tip into an oval ovenproof dish (23 x 33cm and about 5-6cm deep). Press the mixture down well and smooth the top. You can make this and chill 1 day ahead.
  4. For the topping, beat the milk and eggs with seasoning, then pour over the meat. Top with the remaining bay leaves and bake for 35-40 mins until the topping is set and starting to turn golden.

    I made this with the rice for friends and would definitely do it again. I bought the apricot thingybob from Tescos. The rice is nicer than anything I have made before. I also made the coconut tart and it was delicious.

    Its even better if you make the "meat" part of it the day before, and chill, then add the egg topping before cooking. The flavours really intensify.

    Amazing blend of flavours, and my South African husband said it was nothing like his mum's recipe (that's a good thing...) but I found this a bit stodgy and messy to serve up for anything more than a family weekend supper.

    I have been cooking Bobotie for years so was interested to see how this would turn out. It was a large dish and very tasty indeed. I did not have allspice berries and left them out. I missed having almonds layered over the top of the meat but it made no difference in the end. The tomato and onion salad, and yellow rice were perfect partners.

    Sorry thought I had left a comment earlier. Large dish - lasted two days. Kept well. Did not have all spice berries and left them out - used ordinary curry powder and brown bread. Missed using almonds but no need to worry as bags of flavour anyway. Have been making this for years and found this sweeter and more moist than my usual recipe. Enjoyed the yellow rice and tomato and onion too. My 24 year old daughter described it as "fancy food' and my husband thought it was a bit sweet - but I loved it and ate all the remains alone next day with a green salad - a felt wicked!!

    My wife made the Bobotie some weeks ago and it was a resounding success. We're doing the whole South African "suite" for our cooking night on a big family holiday in France next week. Yesterday, we managed to buy Mrs Ball's Chutney and Allspice berries - both in Tesco - and in Irvine - not exactly the centre of the Tesco universe ! Great suite of recipes ! Thanks.

    I made this for my 4 year old son and his friend for tea. They both loved it, but I halved the curry paste to adapt to younger palates. I also found it moreish. I used allspice and regular mango chutney too as I didn't have the required stuff in the cupboard, and it still tasted yum. Didn't bother with the apricot blatjang but will do next time I make it.

    I cooked this last night, my Husband loved it! Again, I didn't have white bread and used wholemeal. No berries, so used all spice. My Husband has told me that he wants this dish again.

    In a senior moment I decided to do the whole South African recipe from this issue, the prawn cakes, babotie, chutney and cocount tart for a South African friend and colleague of my husband. Broke the rule about not making a dish for the first time for a dinner party! and to make South African food for a South African!!!! Senior?? Crazy. Everything turned out perfectly! no All spice berries out here in Yemen but it was all absolutely delicious. Our friend said it was truly authentic Why am I commenting now? he has just rang to ask me to make it for a party he is having!!!

    What a great way to liven up minced beef, this is so tasty. I've replaced the full cream milk with half fat creme fraiche and with semi skimmed boath worked. Put half tsp allspice rather that the berries. Served with home made coleslaw and a mixed rice - delicious.

    This receipe is fantastic and very very tasty. I made it at beginning of the year for my boyfriend and he really enjoyed it. Have just made it again this time for a friend of mine using Quorn as she is a vegetarian and she loved it too!
