Toffee apple & calvados pancakes

Method

  1. Melt a knob of butter with the sugar in a frying pan. Add the apple wedges and cook until golden and tender. Add the calvados and either flambé or bubble away for 2-3 minutes.
  2. Warm the crêpes, divide the apple mix between them and fold in quarters. Serve 1 or 2 crêpes (depending on size) with a dollop of cream and a drizzle of toffee sauce.
