Winter berry trifle

An impressive-looking pud that tastes pretty good too

Ready in 20 minutes, plus chilling

Method

  1. Put the berries and sugar in a pan and heat gently until the sugar has dissolved. Stir in the cassis and cool slightly.
  2. Put a layer of Madeira cake in the bottom of a large glass trifle dish and spoon over 2/3 of the berry mix (you might not need all the liquid).
  3. Beat the mascarpone until smooth then gradually beat in the custard and stir in the vanilla. Spoon on top of the cake and berries. Whip the cream to soft peaks and dollop onto the custard. Chill for an hour. Just before serving, spoon over the rest of the berry mix

    Absolutely amazing pudding - have made this for the last two Christmas's and it always goes down very well - no leftovers for the next day anyway :( !! going to try the Zabaglione trifle this year for a change though but would highly recommend this one - I used a icing bag to pipe the cream on the top - looks amazing .....enjoy :)

    Simply stunning! So easy and quick to make. I followed the recipe without making any changes and added all the juice, so my cake was very moist and juicy but that wasn't a problem with my dinner guests who all had seconds. This will be one of my new failsafe puddings. I will definitely make again - sooner rather than later!

    Made this to take to a friend's house for dessert. It was beautiful - rich and creamy. Used chambord liqueur which was delicious. Everyone had seconds! Will make this again

    I made this yesterday as a trial run for Christmas day pud! Can I just say I have never made anything as fab as this! There was nothing left and seconds were asked for! This was easy to make and took no time at all, but looks and taste fantastic! This has to be my number one Pud! Thank you for sharing this one!

    I have to admit I did add a little bit more liqueur and about another half bag of frozen berry mix to what was suggested,but this was a huge hit at my table! I can guarantee that this will be repeated again and again. Thanks!

    This is fab and so easy to make! I've made it twice in the last week - once for Christmas Day and again for today, NY Day. The first time I used just frozen raspberries and strawberries with raspberry liqueur and this time I threw in some frozen blackberries, red and black currants too with creme de cassis! Mmmm! Fresh cream is difficult to obtain in France so I omitted it altogether and instead crumbled two small meringues and some sprinkles over each serving. I used the local tinned Mt Blanc vanilla desert, which is very like custard, with the mascarpone and, apart from being a little runny, it worked very well! A delicious desert, which I will definitely make again! Thank you for sharing!

    Fabulous! i used a frozen punnet of forest fruits and followed the recipe to the letter. It went down incredibly well and is sooo simlpe to make. I will definitely make this time and tiem again (in fact I'm now going to buy myself a trifle dish just for this!)
