Winter berry trifle

An impressive-looking pud that tastes pretty good too

Ready in 20 minutes, plus chilling

Method

  1. Put the berries and sugar in a pan and heat gently until the sugar has dissolved. Stir in the cassis and cool slightly.
  2. Put a layer of Madeira cake in the bottom of a large glass trifle dish and spoon over 2/3 of the berry mix (you might not need all the liquid).
  3. Beat the mascarpone until smooth then gradually beat in the custard and stir in the vanilla. Spoon on top of the cake and berries. Whip the cream to soft peaks and dollop onto the custard. Chill for an hour. Just before serving, spoon over the rest of the berry mix

    Very nice, but would not bother with the mascarpone next time, as it made the custard layer too creamy and not very sweet and this didn't contrast with the cream enough.

    Very good. Made this twice at Christmas and all loved. Great flavours. However the 4 tbsp of liqueur didn't do it for us, we like a really good sherry kick so added a big glug, and some, of sherry too. Only then was it perfect ; )

    This trifle is so easy to make and looks amazing - I bought a trifle dish from Ikea like the one in the picture and the finished trifle is a real piece of art!! I agree with others that more liquer makes it better, and might try it without the marscapone next time as I love good old plain custard but you lose the taste of it a bit with the marscapone is added - makes it more creamy tasting. But a lovely trifle, and one thats sure to impress :o)

  • 4 tbsp golden caster sugar
  • 4 tbsp crème de cassis (or any other berry liqueur)
