Method

  1. Heat the oven to 180C/fan 160C/gas 4. Arrange the tomatoes on a baking tray and season. Bake for 20 minutes, remove from oven and set aside. Reduce the heat to 120C/fan 100C/gas 1/2.
  2. Put one scallop on each piece of prosciutto, roll up tightly and secure with a toothpick. Heat a frying pan until very hot. Add the olive oil and sear the scallops until the prosciutto is browned and crisp on both sides. Keep warm in the oven while searing the rest.
  3. Add the butter and garlic to the pan and cook for 2 minutes on a low heat. Add the lemon rind and juice and heat through. Add the parsley. Serve the scallops with the tomatoes and the garlic butter drizzled over.

This was absolutely fantastic - so simple, but such a great combination of flavours. I made it for a starter for Christmas Day. We were having standard turkey & all the trimmings, although I'd made stuffed quorn supreme veggie options for 2 veggies present. As a veggie option for this starter I wrapped cubes of halloumi about the size of a scallop, in a strip of bottled piquillo pepper. Instead of pan frying, I made the flavoured butter in advance with garlic, parsley ad lemon zest and also added some chilli, made it in a log, and chilled. I then then put the scallops and cheese/peppers on separate trays, with slices of the flavoured buter on top - and then grilled for a few minutes (a bit longer for the cheese ones). It was so delicious that I made it again a few days later. Really highly recommended.
