Seared sesame-crusted tuna

These sophisticated little bites of seared tuna are super speedy to prepare

Method

  1. Using a potato peeler, remove the peel from the cucumber, then peel strips of flesh, turning the cucumber as you go, so the strips stay thin. You'll need 16. Heat the vinegar, chilli flakes and sugar. When boiling, pour over the cucumber. Cool.
  2. Cut the tuna into cubes and roll in sesame seeds. Heat a little oil in a frying pan and when it's really hot, roll the tuna cubes around in it just long enough to brown the outsides - you don't want to cook them through.
  3. Thread a cucumber strip onto a cocktail stick in an S shape and skewer a tuna cube. Stand upright to serve.

    Quick and quite simple, need to take care the sesame seeds don't burn and spoil the appearance. Will do again.

    I think this is really tasty and have made it a couple of times. The second time I didn't cut the tuna into cubes, I cut it into strips and covered those in sesame seeds and fried it, and then cut it into cubes after that.

    These were surprisingly easy - I thought the seeds were going to stick to the pan but they didn't - instead they acted like popcorn and gave me a good spattering! Would suggest making the cucumber slices a bit chunkier as they kind of disappeared on me.

    Very nice and easy to do. Take care not to over cook the tuna otherwise they go really tough - about 20 seconds each side was ample. Also cut the tuna into strips, fried that then cut into cubes which made cooking them a bit easier.
