Mini salmon & hollandaise tarts

Using ready-made filo pastry makes these little tarts a cinch to make in no time at all

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Lay 2 filo sheets on the work surface side by side and brush with butter, then lay the other 2 sheets on top and brush again. Cut each into 6 squares (you may have some trimmings left).
  2. Brush a mini muffin tin with butter and push a filo square into each. Bake for 5 minutes or until crisp. Lift the tart cases carefully from the tin and fill each with some salmon and spoon over some hollandaise.

    Served as a starter with seared sesame tuna, very easy and impressive. Needed about 10 mins in oven to be crisp.

    Surprisingly easy - and very impressive, I used part hot smoked salmon and part normal smoked for economy and no one minded in the least, next time I will experiment with a variety of fillings. Tip - the smaller the filo squares the neater the finished article - someone remind me next time.

    Made loads for a party. After a bit of experimentation I found that Justrol filo pastry will yield 15 per 2 sheets of pastry so I think I must have made smaller squares than recommended here but they were just the right size. They keep very well in an air tight tin

    Very easy to make. Guests were very impressed. Agree you can get more out of sheet of filo but think the smaller size was neater and easier to eat.

    These are quick and easy, great for any occasion. I found that you only need a really small amount of butter for brushing

    I made a huge batch of the pastry cases and stored them in an airtight tin ready for a party. They remained light and crispy. I used normal smoked salmon and cream cheese mixed with a little horesradish sauce for the filling. Finished off with a little squeeze of lemon and some cracked black peeper, these were easy, impressive and went down a storm. My mother-in -law has asked me to make them again for her annual party this year so they must be good. Give them a try!
