Apple & cranberry stuffing two ways
Making your own stuffing is dead easy with this simple recipe

- Fry the onion in a little butter until soft, add the spices, apple and cranberries and fry everything together briefly. Stir in the hazelnuts, breadcrumbs and egg and divide the mixture in two.
- Fry the pancetta, you should be able to do this in its own fat though you may need to add a little butter. Mix it into one half of the mixture. Pack both lots into separate ovenproof dishes and dot with butter. When the turkey comes out of the oven, put the stuffing in under the potatoes and bake for 30-40 minutes.

- 60.0g hazelnuts , toasted and finely chopped
- 120.0g fresh white breadcrumbs
- 1 egg
- 70.0g or 1 pack pancetta cubetti or diced bacon
