Baked ham with spiced marmalade glaze

Whether you're baking ham for breakfast or for Boxing Day, try this one with the very special marmalade glaze for something really special

40 minutes plus 4 hours 20 minutes in the oven

Method

  1. Heat the oven to 160C/fan 140C/gas 3. Put the oranges, 5 cloves, the peppercorns and onions in the bottom of a large roasting tin. Pour in water to come up to about 4cm. Sit the ham on a trivet in the tray then cover the whole thing tightly with a double layer of foil. Bake in the oven for 4 hours. Remove and turn the oven up to 220C/fan 180C/gas 7.
  2. To make the marmalade glaze, put all the ingredients in a pan and heat gently. Add a splash of water if the glaze is too thick. Bring to a simmer then cool slightly.
  3. Carefully remove the skin from the ham, leaving a decent layer of fat. Score the fat and stud all over with cloves. Brush the ham all over with the glaze then put back in the oven for 15-20 minutes or until golden (brush on more glaze halfway through cooking if you like). Let the ham sit for 20 minutes before carving.

Cook like a pro

Use a small sharp knife to score the ham and don't cut all the way down to the meat. Score lines one way across the fat at 2cm intervals then repeat the other way for a perfect criss-cross pattern.

    I made this ham on Xmas day, but I missed out step one and boiled the ham instead. I made the glaze and roasted the ham as instructed and it was absolutely beautiful. Very easy to make - I would definately try this again, but will try step one aswell next time. (I had boiled my ham before I "remembered" I was doing this recipe LOL)

    I have cooked this a couple of times now, but used a standard joint of ham or gammon not one on the bone. it comes out so moist and tender and the flavours are amazingly different. Everyone really loved it, and asked for it again. the spices really show in the meat. A real show off moment for the chef!

    in answer you glaze the ham and put it back in for 15 - 20 mins at 220. I took it out before putting the temp up and did the glaze. turned out perfectly....

    This was a winner. Loved the marmalade. However, through fault of my own (I suspect) it did destroy my roasting tin as I just could not clean the burnt sugar off the bottom! Worth it though. And the tin was ancient, it was a noble end.

    Afraid most of the glaze ended up in the bottom of the roasting tin. Luckily had paid attention to other comment and had foil in the bottom which saved the pan from being ruined.
