Ingredients

  • 300g dulce de leche (we used Merchant Gourmet)
  • 1 tbsp instant coffee dissolved in 1 tbsp boiling water
  • 1 tsp vanilla extract
  • 300ml brandy

  • 284ml/9½fl oz and 142ml/5fl oz pot single cream

Method

  1. Spoon the dulce de leche into a bowl, then beat in the coffee, vanilla and brandy until smooth. Stir in both pots of cream until well mixed.

  2. Pour into 1 large or several smaller sterilised bottles. This will keep in the fridge for 2 weeks. Drink in liqueur glasses or serve over ice.

Great receipe and after making received many comments saying how nice it was. I would recommend that the ingredients are well mixed before adding the single cream to thoroughly mix. Tastes so nice and will make again for Christmas day.

Made this liqueur without the dulce de leche as I couldn't find it in the supermarkets, so instead I used a tin of Carnation Caramel and it worked out great. The result was really tasty!

Just came across this and made it, its delice! Will be making it for friends n family as soon as i make another batch as i'm sure i'll be polishing this lot off tonight, hic!

Toffee sauce in Rachel Allen 'Bake' recipe (goes with her equally delicious sticky toffee pudding) I feel sure would work a treat instead of the Dulce de Leche. I've noticed the Caramel condensed milk cans now have a little flag on the can 'dulce de leche' too - save anyone decorating their ceiling! Bring on the next batch :)

If I had known it tasted this good I would have made it years ago! Made some on Tuesday & took into Lobbs Farm Shop where I work for staff & Customers to try. Staff, all but one, enjoyed it & will be having some as Christmas presents along with brandy butter & Customers wanted to buy it! Recipe says it will keep for 2 weeks - mine lasted about 24 hours - devine!

I make this as gifts every Christmas and my friends love it. It's also great made with whisky or Rum.

I got it a bit wrong - used a large pot of single cream (600ml/21.1fl.oz) as I didn't read the amounts carefully. And it was STILL fabulous.

ooo just to add, I didn't have enough Brandy and ended up using what I had in the house which was 100ml Brandy, 200ml Whiskey, delicious!

Oh my goodness this is lovely. So easy to make and a lot easier to drink, too easy. I love Baileys so to have a recipe for it is wonderful. Like it says above these would make ideal gifts. If I could rate this more than 5 stars I would. Yum.
