Red pepper, feta & courgette 'lasagne'
Surprise guest turns out to be vegetarian, or simply need a quick veggie option, then try this for Christmas

- Cook the courgettes by frying them briefly in a little olive oil and warm the peppers through in a frying pan.
- Mix the crumbled feta ad mascarpone together in a bowl.
- Layer the pepper with the courgette and feta mix, drizzling dressing between the layers.
- Make the dressing by whisking the olive oil with the other ingredients. Finish with the dressing and pine nuts.
