Red pepper, feta & courgette 'lasagne'

Surprise guest turns out to be vegetarian, or simply need a quick veggie option, then try this for Christmas

Method

  1. Cook the courgettes by frying them briefly in a little olive oil and warm the peppers through in a frying pan.
  2. Mix the crumbled feta ad mascarpone together in a bowl.
  3. Layer the pepper with the courgette and feta mix, drizzling dressing between the layers.
  4. Make the dressing by whisking the olive oil with the other ingredients. Finish with the dressing and pine nuts.
