Broccoli & blue cheese soup

Method

  1. Cook the onion in 1 tbsp olive oil in a large pan until soft (about 5 minutes). Add the potato and stock and simmer until the potato is tender (about 10 minutes).
  2. Add the broccoli and cook for 3-4 minutes until just tender but still bright green. Add half the cheese and whizz to a smooth soup in a blender. Season then serve with the rest of the cheese crumbled over.

    This was the first soup I had ever made and it was truly delicious. It was a more runny texture than I would have hoped for but none-the-less a very simple, flavoursome soup.

    Made this cause I had a huge head of broccoli and some blue cheese...super easy and also very delicious! added a garlic clove (I'm addicted) but really? if you like broccoli and the taste of cheese, go for it! I only had a bit of cheese left, so think it was less cheesy, but still really good and thick and satisfying (just had a bowl)

    I made this soup for lunch today as my friend was visiting, and it was quick and easy which made it appealing to make. I found that It was very straightforward to make. I followed the receipe as suggested, and finished off with a swirl of double cream on top of the soup before serving with warm crusty bread. The end result was perfect. A very satisfied best friend, and husband. Thank you.

    This soup went down well with the whole family, but I halved the amount of blue cheese. I love it so added more to my bowl later. I think it's better to adjust to individual tastes that way. Very easy to make and freezes well.

    I wasn't keen on this. Found it too salty. Might have been the cheese that made it this way. Used roquefort, maybe Stilton would have been nicer. Don't think I like blue cheese didn't think it would be that strong in this though, but guess I was wrong. Won't be making again!!

    This soup is delicious. I also used less cheese than suggested but it is still very tasty. Next time I may use more potato to make the soup a little thicker. Thanks for this recipe.

    I've just made this, and it is the 1st soup I have ever made completely by myself. I have to say that not only is it easy, but tastes absolutely delicious. I didn't weight out my broccoli, or cheese, just estimated it and probably used slighlty more broccoli, and 3 small potatoes as I didn't have any large, and did the same with the onion (I used red as it is all we had) however my Mississippi just tried it and she said it was the perfect consistency and amazingly delicious!! I will definitely be making this again, and soon!!
