Broccoli & blue cheese soup

A deliciously warming soup, perfect for lunch or chilly evenings and ready in just 30 minutes

Method

  1. Cook the onion in 1 tbsp olive oil in a large pan until soft (about 5 minutes). Add the potato and stock and simmer until the potato is tender (about 10 minutes).
  2. Add the broccoli and cook for 3-4 minutes until just tender but still bright green. Add half the cheese and whizz to a smooth soup in a blender. Season then serve with the rest of the cheese crumbled over.

    Just finished a big bowl of this soup it was delicious! I followed the recipe instructions to the T but eye balled the quantity of the ingredients. YUMMY SOUP.

    This is my favourite soup. Have made it lots of times. I sometimes add extra cheese (depends on the maturity of the stilton) and always put all of the cheese in the soup rather than sprinkling it on top. Just scrumptious with warm crusty bread spread with lots of butter.

    so so easy! and so so scrummy, didnt change any of the ingredients and found it perfect, served with croutons though for extra crunch, will def be doing again and again!

    I made this soup today, although I omitted the blue cheese as I am pregnant. The soup is delicious, really tasty, even without the cheese although a little bit of seriously strong cheddar is quite a nice substitute. I must admit, I did let the broccoli go too long and my soup is not such a nice vibrant green as the one pictured!

    Really nice soup but would recommend using less cheese than suggested as it was so rich it became slightly sickly about half way through the bowl! I'd make it again though

    This went down really well in our house. I bought loads of tender stem broccoli really cheap at the market, we used some and I blanched and froze the rest then used it for this soup. Even I enjoyed it and I don't like blue cheese usually (had mine without the cheese crumbled over). Very quick and easy to do.

    I absolutely love this soup! I've made it a few times now and use slightly more broccoli (about 400g) and don't add the extra cheese at the end as I find it too strong. Very easy to adapt to exactly suit your tastes.
