Mustard-stuffed chicken

Method

  1. Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers - not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.

Tip

If you want to use less bacon, stretch out four rashers using the back of a knife to make each one longer and thinner. Wrap just one around each chicken breast as before.

Make it veggie

Cheesy baked mushrooms: Heat oven to 180C/fan 160C/gas 4. Mix the mozzarella and cheddar with 1 tbsp pesto, then spoon into the hollows of 4 portobello mushrooms. Place on a baking tray and roast for 15 mins or until the mushrooms are softened and the cheese is bubbling.

    This is lovely. I also added a dollop of creme fraiche as suggested above. I fully expected the whole thing coming apart in the oven, and a soggy mess. But, everything held together like it was supposed to, so it looked as good as it tasted. Excellent

    Made this with Roule as Sainsbury's had run out of Boursin! It was completely delicious and really easy to make. Served with ratatouille, green salad, and new spuds Mum thought it was "very M&S", which I think is a good thing!

    I dont like mustard and my partner does not like cheese so i used just mozzarela and pesto and for my partner wild mushrooms and whole grain mustard he loved it and i enjoyed mine to

    Great - I made it for a dinner party and everyone had seconds and thirds (they were fighting over the last piece). It is quite fatty so probably will never make it on a regular night! Still, good!

    I loved this recipe, I used pork loins (only because I had them in), I found it very full of flavour and would prob been better to use chicken (as in the recipe) but it was still lovely all the same. I had this with the "Garlic chicken with herbed potatoes" recipe but just made the herbed potatoes and it was the best meal I have ever made! Beautiful.

    Really easy! Served up to friends at a dinner party, extremly well recieved. Will make again. Will experement with different cheeses. Make sure you buy good chicken, it would be a pity to use 'value' type meat and the extra few pence spent are well worth it.

    Try stuffing chicken breast pieces with hot salsa and thin chillies. leave to stand for 2/3 hours then cook in the oven @ 220c for 30/35 minutes WE CALL THIS CHICKEN CHERNOBYL! WOW!!

    Tried it today for lunch with friends and went down a treat. I was a bit scared the chicken went dry but not at all, it was nice and moist. Will definetely do it again.

    me and nealy boy made it. we used boursin instead of mozarella to get a better sauce going on! This worked a treat. served it with some roasted new pots, carrots, red onion and garlic. bit of cabbage and green beans on the side. the ladies loved it. in fact... they are off buying some ice cream now!x

    Just made this and it was delicious! Made my stuffing with wholegrain mustard and finely grated mature cheddar and parmesan, then wrapped the breasts in applewood smoked bacon. Lush! Only issue I had was the cheese didn't really seem to melt and run out as I had predicted even though the breasts were properly cooked. To accompany this I had roasted baby potatoes with garlic and rosemary and an assortment of roasted veg.
