Mustard-stuffed chicken

Method

  1. Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers - not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.

Tip

If you want to use less bacon, stretch out four rashers using the back of a knife to make each one longer and thinner. Wrap just one around each chicken breast as before.

Make it veggie

Cheesy baked mushrooms: Heat oven to 180C/fan 160C/gas 4. Mix the mozzarella and cheddar with 1 tbsp pesto, then spoon into the hollows of 4 portobello mushrooms. Place on a baking tray and roast for 15 mins or until the mushrooms are softened and the cheese is bubbling.

    This was absolutely scrummy! I didn't have any stron cheddar so I used Red Leicester, which seemed to go down very well!

    I tried this last night for my boyfriend. We both really really loved this one and said it was so good I would even cook it when friends came over. I put some winter vegetables in with the chicken and put a little oil over them with rosemary sprigs and roasted the lots. Delicious! Also very very easy!

    I found this recipe yesterday, and couldnt wait to try it today,, wow..it was so nice, i did change mozzarella to Boursin with garlic which i bought from sainsbury, i didnt put cheddar either, i put sundried tomato instead, then mixed with wholegrain mustard. so nice, and simple to make, also it is fun to work with my husband, as he is holding the chicken and i wrapped it with bacon..we both loved it. i also made roasted potatoes which i found from bbc good food as well, made it with goose fat, lovely..will definetely make it again, again, again..

    Made a nice change from plain chicken breast, I didnt have any cheddar so used gouda. To be honest I thought it would be tastier than what it was but it was an interesting recipe and the bacon gave it a nice flavour. If I try this again I would have to jaz it up a bit.

    I can't say enough about this lovely, simple little recipe. It is a wonderful "base" recipe to try then change it up however you choose. Just make sure you have a good grainy mustard and plenty of it smeared inside. I have never had such a positive response from friends I have shared this with. A definate "must try" to dazzle your guests without any effort. Have never roasted cherry tomatoes in the pan but will be next time.

    I made this with Boursin with Garlic and Herb which my other half said was lovely with the Chicken but I had it with the mushrooms and it was slightly overpowering, I think the mozarella would be better with the mushrooms. I also served crushed potatoes but think it may be better with pasta and will be trying that next time. Was easy to make after work, although took slightly longer than it was supposed to.

    Wow.. This is the first proper meal i've made and i made it with olive oil crushed potatoes and roasted vegetables.. I was so proud of it and my other half loved it! I'm doing it again tonight because i have ingredients left!

    I have often stuffed chicken breasts in a similar fashion following an idea from a well known luxury supermarket range, but using various cheeses - gruyere is a good tasty one. Following these recommendations I tried Boursin with garlic and herbs (softened with a little olive oil) and it was delicious. I always find that the filling tends to escape, so don't scrimp on the bacon covering - I always use a budget supermarket range of italian cured ham, cheap enough so I don't mind using the whole packet on one recipe, thus keeping my fillings tight inside, and the chicken moist. It's worth a try, and very easy, even if you're not that confident with cooking!

    I,m so impressed with this recipe. I used Boursin in place of the other cheeses and left out the mustard. Very quick and easy to make and loved by the whole family. Served it with Rosti potatoes and steamed broccoli. A winner!
