Ingredients

  • 125g ball mozzarella, torn into small pieces
  • 50g strong cheddar, grated

  • 1 tbsp wholegrain mustard
  • 4 skinless boneless chicken breast fillets
  • 8 smoked streaky bacon rashers

Method

  1. Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers – not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.

I made this using Borsin instead of mozzarella, but would recommend mozzarella, as the taste of the borsin was overpowering.

Also, slit the chicken from the top, not the side, or the filling will fall out.

Gorgeous, and I don't usually like smoked bacon. Made it exactly to the recipe and I'm glad I did. My husband also loved it.

This was a delicious recipe!.. just tried it yesterday for my family and they all loved it!..
the only problem i faced was that the chicken was a bit dry.. how do you tackle that?

Great recipe - I use Philadelphia Light instead of the Mozzarella to give a more diet friendly version. Works brilliantly!

This was as good as everyone said and really easy! I did low fat Philly and cheddar plus the cherry tomatoes as a base- it was light and plenty of sauce. Even my 2 year old ate it, so result!

I want to make this for a dinner party but can't decide what would go best to accompany it? Any suggestions on a sauce I could make too?? :-)

Loved it! I improvised as I didn't have the exact ingredients - used cream cheese with some grated colby and parmesan for flavour and had only a chilli tomato wholegrain mustard - it all worked together beautifully. will definitely have again :)

This went down a storm the other evening with a group of friends. I substituted plain cream cheese for the mozzarella and added decent amount of ground black pepper. Otherwise followed the recipe as given and it worked brilliantly. Chicken breasts can be a bit bland and dry but this recipe turns them into a succulent treat. Not too pricey either. Served with green beans and a potato gratin. Yum!

Tries this recipe last night and was really impressed. It was very easy to make and tasted great. The mustard wasn't too strong and just used two Easters of normal bacon. Will definitely be making this again.

This is has been a firm family favourite since I found the recipe. I read the comments before I first made it and decided to use Boursin, which works fantastically well. It's really easy to make and seems to be pretty fool-proof!

Very Tasty. A Basic that can be added to/altered. We have tried similar with soft cheese & paxo stuffing- the chicken then wrapped in bacon, then bread crumbs.

This was really lovely, I did add a little bit more mustard to the filling, but it was delicious, and I served it with mashed potatoes and broccoli! Definately one to make again!
