  • 125g ball mozzarella, torn into small pieces
  • 50g strong cheddar, grated

  • 1 tbsp wholegrain mustard
  • 4 skinless boneless chicken breast fillets
  • 8 smoked streaky bacon rashers


  1. Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers – not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.

I tend to add 1 tea spoon of wholegrain mustard and 1 English mustard which gives a nice bit of warmth to the dish.

Easy, tasty, great dish for entertaining! Served it with baby carrots and asparagus on a bed of (own recipe for) Mediterranean couscous. Yum!! Had lots of compliments for it, and it was a doddle to make!!

Very nice. Filling makes for a very moist tasty chicken dish. Used juices to make a chicken/mustard flavour gravy.

I also swapped the mozarella for Boursin (with extra crushed garlic - we love our garlic!) and left out the mustard as I thought it would clash with the garlic. It was delicious!!

Tried this last night but found it very dry! The use of mozzarella didn't really work but maybe trying another soft cheese would be better?

We've just eaten this, with good old mash and green beans. It's delicious! I made it as in the recipe and also made the veggie alternative, and both options proved to be a hit!!! Really quick, easy and tasty - gonna serve this at my next dinner party...

I used a garlic and herb roule instead of mozzarella, and also pancetta. Awesome!

Yummy! although, i did replace cheddar with spoonfull of philadelphia soft cheese...
I'm not very good at cooking, but I thought this dish was very easy to make, but looked tasted very nice (had it with rice and cherry toms)

So easy and quick. I used plain soft cheese and added fresh chives and garlic. Really yummy. Left-overs ate well cold with salad the next day.

Absolutely Delicious! Easy to prepare and cook. Chicken is very succulent and oozing with gorgeous flavours. Served with galic and herbed roast potatoes. Shall definately make this dish again

This was SO yummy!! I used stock from my cupboard and didn't use mozzarella but my 3 year old and partner wolfed it down, we ate it with onion risotto. I thought I'd used too much English mustard but it was perfect!!!! Thanks for the great recipe xxxx

I did this tonight but used Cage Aged Cheddar which is very strong so less needed and a bit of french cheese I had left over. It was seriously gorgeous but even better was that it went with the olive crushed potatoes so well - cant wait to try again!
