Ingredients

  • 125g ball mozzarella, torn into small pieces
  • 50g strong cheddar, grated

  • 1 tbsp wholegrain mustard
  • 4 skinless boneless chicken breast fillets
  • 8 smoked streaky bacon rashers

Method

  1. Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers – not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.

Top drawer stuff! Everyone loved it. In the future though, I would probably use Parma ham intead of bacon, only because here in Australia, you can't get decent streaky bacon like the mother land.

Delicious! I used Boursin and instead of the mustard, added my own sweet red jalapenos to the cheese for a bit of a kick. Served with a crunchy green salad, mixed peppers and the recommended crushed potatoes (with a hint of onion and garlic) Yum!

Try putting the chicken stuffed with boursin inside a partially roasted red pepper. Then cook as above. The boursin and red pepper juices are fab together!

A great and very easy recipe to do, i made it packed full of mozzarella, and crushed olive oil new potatoes. i did put them in the oven for 15/20 mins and then under the grill for a couple of mins to crisp up.

This was delicious. Absolutely spot on. I used boursin light and had a side of green beans and crispy new potatoes. Would recommend to anyone.

This was fantastic! It took a little longer than stated to cook but it was worth the wait! A really tasty dish that was quick and easy to prepare. I served the chicken with baby potatoes sauted with red onion, bacon and mushrooms and some winter roasted veg - delicious!

I've not used this exact combitation of stuffings, but I quite often use cream cheese (light or extra light work too), and mix in garlic, mushrooms and sometimes some spring onion. Very tasty. Great with a cheese sauce on top, and oven roasted veggies.

I will make this again but will try boursin instead of mozorella as it was a little bit dry.

This was soooooo good, Everyone in the family loved it. I used the Boursin with it. Found it so quick and easy to make and yet it tasted sooo good. Family thought I'd spent ages making it. Might leave out cheddar next time, maybe add some chopped Mushrooms. I'll let you know how it goes.

Also used Boursin instead of Mozzerella, served with pototoes as suggested above. Very simple to do and tasted fantastic.

This was delicious. I used Boursin with Pepper instead of mozarella and roasted some cherry tomatoes in the same dish. My husband loved it
