Chunky minestrone soup

Method

  1. In a food processor, whizz the carrots, onion and celery into small pieces. Heat the oil in a pan, add the processed vegetables, garlic and potatoes, then cook over a high heat for 5 mins until softened.
  2. Stir in the tomato purée, stock and tomatoes. Bring to the boil, then turn down the heat and simmer, covered, for 10 mins.
  3. Tip in the beans and pasta, then cook for a further 10 mins, adding the cabbage for the final 2 mins. Season to taste and serve with crusty bread.

    I have made this delicious soup several times now, to say it serves four is an under estimation, I make it and freeze it into single portions, it is absolutely delicious and everyone loves it, especially with a shaving or two of parmesan.

    Use a huge pot as makes oodles of the stuff. More like a meal than just soup. Served with crispy bacon bits & grated cheese. Big hit all round!

    This is a lovely winter warmer and I have loads leftover for the freezer. I love achovies so I added 4 finely diced when adding the tomato puree then I added the tomatoes and stock. This really added to the flavour it just gives a little richness.

    Is it a pasta dish, a stew or a soup? Or cares, it's a great recipe. Makes loads and easy to change depending on what veg you have in the fridge. Even my children like it they can't stand soup, I serve it to them with garlic bread or pesto toasties.

    It tastes fantastic, a meal in a bowl and what's left I freeze. For a change I added broccoli instead of the cabbage. We ate it with warm olive ciabatta.

    Love minestrone and this one delivers great taste for minimum effort, some I've made have an ingredients as long as a long thing. Added some dried chilli and more chopped tomatoes, less stock, and now its perfect for me.

    this soup is nutritious, extremely tasty and easy to make. however, i think someone has the quantity levels wrong somewhere! ... this recipe will serve at least double what it suggests (and there would probably still be some left over!) ... i thought i'd processed the veg too finely ... but probably a blessing giving how extremely thick the soup has turned out, anyway ... also, i had to extend the cooking time ... 10 mins just wasn't enough for the pasta to be cooked (on my cooker, at least) ....

  • 3 large carrots , roughly chopped
  • 1 large onion , roughly chopped
  • 4 celery sticks, roughly chopped
  • 1 tbsp olive oil
  • 2 garlic cloves , crushed
  • 2 large potatoes , cut into small dice
  • 2 tbsp tomato purée
  • 2l vegetable stock
  • 400g can chopped tomatoes
  • 400g can butter or cannellini beans
  • 140g spaghetti , snapped into short lengths
  • 1⁄2 head Savoy cabbage , shredded
  • crusty bread , to serve
