Griddled minute steaks with warm bean salad
Quick, classic, and low Gi, and if your easy on the oil, healthy too! A great mid-week, meat satisfying meal

- Cook the beans in boiling water for 4-5 minutes.
- Meanwhile, heat a griddle (chargrill) to smoking hot. Put the steak pieces between 2 sheets of clingfilm and bash out to 1cm thickness with the back of a wooden spoon. Season lightly, brush with oil then griddle for 1 minute each side and put on a plate to rest.
- Whisk the dressing ingredients together. Drain the beans, mix with the cherry tomatoes and dressing and serve with the steak.

- 150g cherry tomatoes , halved
DRESSING
- ½ tsp Dijon mustard
- 1 tbsp balsamic vinegar
- 2 tbsp extra-virgin olive oil
- 1 shallot , finely chopped
