Sticky chicken drumsticks

Delicious chicken drumsticks with a sticky soy glaze that can be cooked on the grill or the barbie - weather permitting

Method

  1. Make 3 slashes on each of the drumsticks. Mix together the soy, honey, oil, tomato purée and mustard. Pour this mixture over the chicken and coat thoroughly. Leave to marinate for 30 mins at room temperature or overnight in the fridge. Heat oven to 200C/fan 180C/gas 6.
  2. Tip the chicken into a shallow roasting tray and cook for 35 mins, turning occasionally, until the chicken is tender and glistening with the marinade.

This marinade is also delicious with pork. Try marinating spare ribs and slow-roasting them until the meat is sticky and falling off the bone.

    I thought these were easy and tasty though I struggled a little to get the ratios for the glaze to seem right. Once I got there, I was pleased with the result and the chicken was good the next day too.

    i make these in big batches and always have them in the frezer with carrot muffins, the kids love them leve in fridge overnight to defrost and they eat them cold for lunch along with a muffin and some cucumber sticks perfect no cook quick anytime school lunch

    i have just done this for my kid, partner, mum and my cousin. they were absolutly gorgeous in fact i got told off for being stingy with the marinade! next time i make them i will do extra sauce as its lovely. top marks!

    This was really yummy! I made it last night for myself, husband and 6 year old daughter and was enjoyed by everyone. I served it with homemade cruncy coleslaw (GF July 2007) and potato wedges. Will definately make again.

    I used free range chicken and marinated for a good 6 hours but I thought it wasn't very strong in the flavours. My bf and I eat a lot of chilli, garlic, ginger Thai/Chinese food so maybe this wasn't 'tasty' enough for us. My parents loved it though and they eat milder foods :) will try a different recipe.

    I doubled the ingredients and altered the amount a bit: 5 tbsp soy sauce, 2 tbsp honey, 1 tbsp Dijon mustard, 1 tbsp tomato purée, 1 tsp olive oil. Added 1/2 tsp grilled meat spices for a bit of edge. Delicious, will make again!
