Method

  1. Make 3 slashes on each of the drumsticks. Mix together the soy, honey, oil, tomato purée and mustard. Pour this mixture over the chicken and coat thoroughly. Leave to marinate for 30 mins at room temperature or overnight in the fridge. Heat oven to 200C/fan 180C/gas 6.
  2. Tip the chicken into a shallow roasting tray and cook for 35 mins, turning occasionally, until the chicken is tender and glistening with the marinade.

Tip

This marinade is also delicious with pork. Try marinating spare ribs and slow-roasting them until the meat is sticky and falling off the bone.

Very tasty. Made these for a New Year's Eve party, the leftovers helped ease the hangover the next day!

These were really nice but I found they were sitting in too much liquid and I would have preferred them "stickier". Any suggestions?

Liked this recipe but did adapt it to make more and also added Garlic paste and sesame seeds to the end of the recipe. Didn't have Dijon Mustard so used grain mustard instead. Tasted very nice

Cooked this to impress the boyfriend; then had to cook it the next week because I liked it so much. Also found they are very good for taking for lunch, although a tiny bit messy they were delicious cold. I used slightly more of everything except the oil in the sauce and found the quantity good. I also tried to get some of it under the chicken skin to lock in the flavour.

Great recipe for a snack or late supper. Roll on summer to try on the BBQ. As stated above, double the marinade and baste often. Personally will add some chilli next time, but great as it is.

Really nice, tasty and easy! My husband, son and myself had it with egg fried rice and will have it again, again and again. Would be lovely to have cold in the summer with salad as well, so an all year rounder! Can't get better than that!

Taste sensation. I added a clove of garlic to my recipe which really worked well with the flavor, might try a bit of chili next time. My only problem was i didn't make enough!!

Just this second made it and it's brill. The looser marinade means it glazes the chicken better, and the olive oil gives it a real gloss as well as aiding the cooking. It looks and tastes beautiful, the calorie count might be a bit optimistic though.
