Potato & Savoy cabbage soup with bacon

Method

  1. Chop the onion, carrot, celery and garlic in a food processor. Heat the oil over a medium heat in a large saucepan. Add the vegetables and potatoes, season well, then reduce the heat and cover the pan. Gently cook for about 5 mins until starting to soften, then add the stock, turn up the heat and bring to the boil. Simmer for 5 mins more, or until all the vegetables are tender.
  2. While the soup is cooking, grill or fry the bacon until crisp, then cut into strips. Shred the cabbage, discarding the core.
  3. Whizz the soup in the food processor until smooth, then return to the pan and add the cabbage. Simmer for a few mins until the cabbage is just tender, then season to taste and serve scattered with the bacon.

Make it a chicken stew

QUICK CHICKEN WITH LEEKS & CABBAGE Cut 4 chicken breasts into large chunks and chop the bacon. Heat the oil in a frying pan, fry together until golden, then remove. Add a little more oil, then fry 4 small, finely sliced leeks, the potatoes and the carrot, finely sliced, for few mins. Add stock as before. Once the potato is tender, add the chicken and cabbage and simmer for 5 mins. Leave the stew chunky and serve with crusty bread.

    Lovely soup, enjoyed by all the family, including my 5 year old daughter, i used a hand blender once the cabbage was cooked to make this into a smooth soup, my daughter would never of eaten it if she knew there was cabbage in it. Had some warm garlic bread with it too.

    Really easy to make but took me much longer than 20 minutes to prepare and cook. More like an hour. Tasty so worth it. Needs lots of seasoning

    Add loads of pepper, some herbs de provence, 3 chestnut mushrooms, don't use celery, use about 3 potatoes.

    This was delicious! I don't like celery, so I changed it for a leek. I left out the bacon to make a vegetarian version and didn't put the soup in the food processor because I like finding all the vegetables! Will definitely make again!

    I enjoyed this and will make it again but I might change a few things. I think it might be nice with left over chicken or ham rather than the bacon. The bacon didn't seem to add much to the taste for me.

    The first line made me realise my food processor does more than just blend, so huge thanks for that! This was a quick, easy and very nutritious soup. The boyfriend really liked the contrast between the soup and the shredded cabbage. Nice and hearty. Will definitely be making up again next time I buy too many vegetables! Knocked off a point because it wasn't "out of this world", just really lovely :)

    Hi Made this soup this weekend, as I had bought a large bag of spring greens for 10 pence. I already had the other ingredients in the fridge. I didn�t whizz the vegetables down I left them chunky. I also added a tin of bolletti beans and added some single cream. Added a bit more pepper. After frying the bacon I use some of the stock to clean the pan and added this back into the soup. A perfect soup for a cold winters day and very filling. 10/10

    Absolutely delicious, made it with chicken stock and followed it exactly to the recipe, added quite a lot of pepper due to 'season well' which I think really benefitted it. Didn't bother with the bacon as I didn't much see the point!

    I cooked this on Saturday for my family - husband, 8yr old daughter and 3yr old son. They thought it was absolutely delicious. We had some Italian foodie friends staying and they had some too. Verdict - 'superb'. The soup tasted even better the next day ( I doubled the ingredients). I used good quality lardons instead of slices of bacon - and for presentation , after I had pan fried them crisp, piled them up in the middle of each soup portion - then drizzled with olive oil. Will make again! Simple to make. Use the best quality ingredients.

    Agree with the rest-easy yet delicious soup to cook! You can add anything extra you wish - bacon, tinned beans, sausage, etc I had it just vegetarian style - yummy and healthy too as you cook veg for little time so still plenty of vitamins left! Bon appetit !

    For the stew: I substituted cubes of sweet potato (in Dutch 'zoete bataat') for the potato and added a few spoons of creme fraiche. Extra cabbage, too. Delicious!
