  • a quarter medium Savoy cabbage (about 200g/8oz)

Method

  1. Chop the onion, carrot, celery and garlic in a food processor. Heat the oil over a medium heat in a large saucepan. Add the vegetables and potatoes, season well, then reduce the heat and cover the pan. Gently cook for about 5 mins until starting to soften, then add the stock, turn up the heat and bring to the boil. Simmer for 5 mins more, or until all the vegetables are tender.

  2. While the soup is cooking, grill or fry the bacon until crisp, then cut into strips. Shred the cabbage, discarding the core.

  3. Whizz the soup in the food processor until smooth, then return to the pan and add the cabbage. Simmer for a few mins until the cabbage is just tender, then season to taste and serve scattered with the bacon.

I has just enough odds and ends to do this. I had to use an assortment of potato varieties and only had half a sweatheart cabbage but the whole thing was delicious. As I am lazy I just peeled and chopped the veg by hand rather than mess up my chopper.

I used Kallo Organic Chicken Stock Cubes ( I ONLY use Organic Cubes) and did not use any salt at all! My two cubes and squirt of garlic did the trick. I also put in a large knob of butter for flavour.
I only used 1 potato and have had 2 bowls of soup out of it.
A lovely recipe.
I like it as a VEGETABLE soup although I agree beans could be added (butterbeans for instance my favourite or others?) at profit and various dairy products like good cheese, cream etc.
I am eating soup without any splodges of creme friache that is in my fridge.

I've just made it now and it is simply green and simply delicious.
This was a microwave job and I even threw in some frozen bacon to give it a bacony feel. I liquidised it but left parts of it rough.
I will definitely make this again.

I am throwing in an obligatory squirt of garlic puree to proceedings and will microwave some bacon. ( I usaully prefer stove top cooking but do extensively use my Microwave as in steaming vegetables or making my lovely Lentil soup)

This soup looks like it has 3-4 portions of 5 portions a day with the
1. the Carrot
2.The Onion
3.the cabbage

Maybe such things could be mentioned in the blurb on the Recipe as it seems an awfully natural way to get 3 or your 5 a day.(using 80-100g as a measurement).
I am just test driving the Recipe in my Microwave!!

I made this soup last night and instead of adding the cabbage & bacon at the end i cooked everything together and added 1/4 tsp of crushed chillies because I thought it might be a bit bland. I liquidised everything and the result was fantastic. Also I used a bit less water because we like soup to be thick and creamy. I will definately make this again when I have left over cabbage.

Another great soup for my collection. Warming,hearthy,cheapish-the dry cured bacon is a bit pricey but worth it. Didn't have celery,still very tasty.

Lovely recipe. I just roughly chopped the veg, as it was all liquidised at the end, so it saved time and pots.

I happened upon this recipe by accident and thought "ermm, cold, chilly day - why not". Well, it's so simple to make with most ingredients that many people will have in cupboards/fridges. It tastes delicious. I will certainly make it again and again and again.

just made this for lunch! My version was more like a potato soup with cabbage and leek but it was sooooooo yummy! Its so healthy and easy i kinda just chucked a load of veg in. I didnt even bother using the blender (too much washing up!) i just used a masher towards the end of cooking and it was prob a bit chunkier but i loved it. Also used a bay leef and kept it veggie leaving out the bacon, will deff be making many times more!
