Potato & Savoy cabbage soup with bacon

Method

  1. Chop the onion, carrot, celery and garlic in a food processor. Heat the oil over a medium heat in a large saucepan. Add the vegetables and potatoes, season well, then reduce the heat and cover the pan. Gently cook for about 5 mins until starting to soften, then add the stock, turn up the heat and bring to the boil. Simmer for 5 mins more, or until all the vegetables are tender.
  2. While the soup is cooking, grill or fry the bacon until crisp, then cut into strips. Shred the cabbage, discarding the core.
  3. Whizz the soup in the food processor until smooth, then return to the pan and add the cabbage. Simmer for a few mins until the cabbage is just tender, then season to taste and serve scattered with the bacon.

Make it a chicken stew

QUICK CHICKEN WITH LEEKS & CABBAGE Cut 4 chicken breasts into large chunks and chop the bacon. Heat the oil in a frying pan, fry together until golden, then remove. Add a little more oil, then fry 4 small, finely sliced leeks, the potatoes and the carrot, finely sliced, for few mins. Add stock as before. Once the potato is tender, add the chicken and cabbage and simmer for 5 mins. Leave the stew chunky and serve with crusty bread.

    I was looking for a recipe that would use loads of cabbage at once as I bought 3 large bags of chopped cabbage for �2 at my local supermarket and needed to use it up before it went slimy! This was just the ticket - an easy-to-make, hearty and tasty soup to take to work for lunches and to freeze for those cold and rainy evenings when I can't be mithered to cook. 4 meals for under �4. Magic! Well done you lot!!! Spot...xxx

    Great heart warming soup. Didnt follow quantities exactlyjust used what I had - no celery so substituted leeks and added extra cabbage. Served with fresh baguettes. Will def make this again ~ Lovely!

    The casserole version of this is now a firm favourite. Substitute the carrot for whatever is in the fridge - I used mushrooms and a green pepper. Delicious, wholesome and easy to make, winner!

    I found this recipe for young friends of ours who wanted to cook for us in my kitchen as they didnt have their own home at the time. They wanted to make a cabbage soup so I found them this recipe as it looked simple and tasty. We have since made it ourselves several times as a main meal as it is very hearty and our friends cooked it for their family as part of their christmas meal in their newly purchased home. Neither of us has added bacon as it makes the fat content very high but it is delicious without it. I love the texture of the cabbage in contrast to the smoothness of the soup.

    This is lovely and filling. Instead of using a food processor to chop the veg I grated it (and my knuckle at the same time!) and I added a lot less bacon, its just as good without the bacon though. Will definitely make this again

    It's a great soup l add pulses to it too, but a favourite for me is to add butter beans(tinned) drained and washed then just tip them in to heat up!!

    I've just made this for my lunch and it was so quick and really delicious! I had bought a savoy cabbage on sunday but hadn't used it and so decided to look on Good Food for suggestions as to what to do with it. There were loads of lovely suggestions but this caught my eye as it used all basic ingredients that I had in (apart from streaky bacon). I must admit that I don't often make homemade soup and really should make the effect as I had forgotten how quick, tasty and filling they are. Will definately make it again and expect with the bacon it will be even more delicious.

    just made this for lunch! My version was more like a potato soup with cabbage and leek but it was sooooooo yummy! Its so healthy and easy i kinda just chucked a load of veg in. I didnt even bother using the blender (too much washing up!) i just used a masher towards the end of cooking and it was prob a bit chunkier but i loved it. Also used a bay leef and kept it veggie leaving out the bacon, will deff be making many times more!
