Rigatoni with Parma ham & tomatoes

Method

  1. Cook the pasta according to pack instructions. Heat 1 tbsp oil in a frying pan and cook the garlic and Parma ham gently for 3 minutes. Add the tomatoes and cook until they soften and release their juices.
  2. Drain the pasta, keeping a little of the water back and mix with the tomatoes, removing the garlic. Scatter with the mozzarella and basil.

Leave out the Parma ham and stir some rocket or spinach through the tomatoes, use half-fat mozzarella torn into pieces to bring the fat and salt down.

    The natural juices from the tomatoes actually made it much saucier than I'd first thought it would be. Very tasty considering how simple and quick it is to throw together.

    Really didn't like this. The mozzarella half melted to a well-chewed chewing gum consistency and the parma ham made it far too salty. I like all the ingredients individually, but together it wasn't nice at all.
