Grilled chicken with yogurt & bulgur wheat salad

Give everyday grilled chicken a twist with a quick marinade and an easy salad to serve alongside

Method

  1. Mix together the yogurt, garlic, cumin and 1 tbsp lemon juice. Pour over the chicken and leave to marinate for 10 minutes. Meanwhile, put the bulgur wheat in a bowl and cover with the stock. Leave for 10 minutes to soften and absorb the liquid. Drain off any excess.
  2. Lift the chicken out of the marinade and grill under a medium heat turning once until cooked through, about 8-10 minutes. Stir the herbs through the bulgur wheat with the remaining lemon juice and serve with the chicken.

Use lamb steaks instead of chicken and stir some chopped mint through the bulgur wheat.

    I have to fry the chicken unfortunately as I don't have a grill at the moment, but it is delicious and easy to prepare. It is a regular feature in our house.

    the chicken was tasty and moist, although I cooked mine for longer than 8 - 10 minutes that is stated.

    A different & more unusual way to cook chicken, I used the 0% greek yogurt to keep it low fat. It does need more than 8 -10 mins under the grill though.

    Disaster! The bulgur was still hard and uneatable after 25 minutes, the chicken burned and was impossible to cook.

  • 5 tbsp natural yogurt
  • 1 garlic clove , crushed
  • 1 tsp cumin seeds
  • 1 lemon , juiced
  • 4 large chicken thighs , boneless skinless
  • 100g bulgur wheat
  • 200g chicken stock fresh, cube or concentrate
  • a handful of chives, parsley or coriander or a mixture, roughly chopped
