Parmesan & parsley-crusted salmon

Perk up salmon fillets, with a light, Italian-inspired topping

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Season and put the salmon fillets on a lightly buttered non-stick baking tray.
  2. Whizz the breadcrumbs, parsley, lime juice, 1 tbsp oil and Parmesan in a food processor. Cover the salmon with the breadcrumb mixture and bake in the oven for 10-12 minutes until the salmon is cooked through and the breadcrumbs golden. Serve with salad or new potatoes.

Instead of parsley try dill or chives. Leave out the lime juice and spice it up with ½ tsp paprika instead.

    I made this for my mum and her friends for New Year's Eve dinner party. Really simple and just the kind of recipe I like - all the preparation done in advance and then bung in the oven whilst eating the starter. Really tasty. Will be doing it again ... and again!

    I made this last night and it was gorgeous. I forgot to put in the lime but it still was fab. I served it with the Spanish potatoes from this site and they were lovely too.

    Lovely receipe, quick and delicious. Our local supermarket didn't have limes (good grief!) so lemons instead, but very nice. Again found it needed more than the 10-12 mins, but it tasted lovely. Make a good mid-week meal or is good enough to be a dinner party main if you need a quick receipe.

    I made a skirt of parma ham around the salmon. The crust included both parsley & chives, a small amount of bottled lemon juice as I didn't have a lime & I also added a small amount of paprika as mentioned in the "Receipe extra". It was very well received

    Very easy and very tasty. I served it with potato wedges and broccoli, but it needs juicy side dishes as it was all quite dry. Next time I would serve it with salad (nicely dressed) and/or a big dollop of mayo!

    Delicious! All my friends want this recipe. I cooked mine for longer too. I changed it slightly as I found it a little dry - I put a layer of Philadelphia cream cheese on top of the salmon and then put the herby breadcrumb topping on top of that - the cream cheese stays in place and worked really well. I also added some pine nuts and lime zest to the breadcrumbs and I placed each salmon fillet on 2 slices of lemon when cooking. The extra zestiness did not overpower it at all. My all time favourite summer lunch recipe!!

    This is a brilliant recipe. The delightful taste belies the simplicity of preparation. I cooked my salmon for 15 minutes and it was perfect. Made exactly as recipe except that I left out the olive oil and instead, sprayed it onto the crust before baking. Cooked with cherry tomatoes on the vine and served with new potatoes tossed in chopped mint and chives and steamed broccoli florets. Lovely summer main course for family or guests alike. Gorgeous!
