Parmesan & parsley-crusted salmon

Perk up salmon fillets, with a light, Italian-inspired topping

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Season and put the salmon fillets on a lightly buttered non-stick baking tray.
  2. Whizz the breadcrumbs, parsley, lime juice, 1 tbsp oil and parmesan in a food processor. Cover the salmon with the breadcrumb mixture and bake in the oven for 10-12 minutes until the salmon is cooked through and the breadcrumbs golden. Serve with salad or new potatoes.

Instead of parsley try dill or chives. Leave out the lime juice and spice it up with ½ tsp paprika instead.

    Have made this recipe several times for supper for friends and it always goes down a treat. Quick and easy and always tasty. We like it particularly in the autumn/winter with a tray full of roasted veggies and grilled or baked tomatoes.

    Very nice! Easy and tasty. I followed Jenny's advice and baked some tomatoes to go with it - excellent! One thing to note is that the large salmon filets I used from the local fishmonger took a little longer than 10-12 mins to cook through.

    To top my salmon I fry about 4oz brown breadcrumbs in one ounce of butter then add the rind of a lemon, some chopped chives and a grating of parmesan. Spres on top of salmon and bake for about 15 minutes.

    Not a combination that you would normally think of but really effective. Have made this several times and the flavours work really well together. It makes a simple salmon fillet a little special. Delicious.

    Very easy tasty recipe to make. I cooked the salmon for 20 minutes and they were perfectly moist. 10-12 mins would have been undercooked for my preference but it would depend on the thickness of the fillets. I would make this recipe again as is great for a mid-week meal and my 5 year old even ate it!

    This is so quick and easy and went down a treat. I have also used large trout fillets instead of the salmon and a squeeze of lemon instead of the lime.

    Very tasty meal, although my husband doesn't like the crust on the salmon, he takes it off. I too have to cook the salmon a bit longer, but it could be because of my not-so-great oven. Anyway, it's delicious and simple! I've been making it almost regularly for a year now. I use lemon or lime, I sometimes leave the crumbs out, all depending on what I have in my pantry at that moment. The result is always great and I accompany it with steamed vegetables.
