Method

  1. Heat the oil in a frying pan, then add the potato slices and fry on both sides until brown. Add the tomatoes and spring onions and fry for about 1 min until softened. Season with salt and pepper, then make a space in the pan. Gently break the egg into the space and fry until cooked to your liking. Scatter over the basil leaves and serve.

Really easy and really tasty. I added some chilli flakes like the other comments suggested because I like spicy food. Great flavours!

Re previous comment, sorry forgot to say I started the potatoes off using the 'crunchy new potatoes' method on this website, ie, par boiling and then draining and crushing into oven dish. Added the paprika and olive oil then carried on using this recipe! More practical for a larger amount of people.

We had this last night as I had not much food in stock. Used freshly dug potatoes from the garden and altered the recipe as had a tub of sunBlush tomatoes in the fridge so added these with the spring onion. Used five eggs. In other words it is a great recipe as a last minute supper when you only have eggs and potatoes. Basil definitely needed too. Excellent and will make again and again!

Made this last night, was a quick and tasty dinner. Used salad tomatoes, chopped yellow pepper, spring onion, dried basil, and a finely chopped chilli for a bit of a kick. Will definitely make again, useful for using up whatever you have in the fridge.

Made this for sunday bunch - it was delicious. Best breakfast I've had in a long time and really simple to do. I used up leftover new potatoes from a mid week meal and substituted spring onion for red onion (as it is what I had in the fridge).

A great hangover cure!

Simple and quick to make midweek. Next time I'll add a greater variety of veg too. Perhaps some mushrooms or peas.
