Thai minced chicken salad

Known as larb gai in Thailand, the hot spiciness in this chicken salad recipe works really well with the crunchy veg, creating a perfect balance of flavour and heat

Method

  1. Roughly chop the lemongrass, lime leaves, red chillies, garlic and ginger, then throw them all into a processor and blitz until everything is very finely chopped together. Mince the chicken breasts into tiny pieces.
  2. Heat a wok over a high heat and add the vegetable oil and the sesame oil. Throw in the lemongrass mixture and fry briefly before adding the minced chicken and the chilli powder. Stir-fry the chicken for 4 mins then splash in the fish sauce. Turn down the heat a little and allow the chicken and fish sauce to bubble together for another 4 mins, stirring, then add the chopped red onion and cook for another min.
  3. Remove from the heat, pour over the lime juice and toss in the herbs. Serve with the salad veg and a lime wedge on the side.

    This is just fabulous,hot and spicy,but the cucumber cools it down. I served it in the lettuce leaves,and i halved the recipe for 2 people,its so easily halved .This will be a regular dish in our house.

    Gorgeous! I made it as a main course for my husband & I with 500g Turkey mince instead of chicken. I served it with stir fried vegetables and it was delicious (and there's enough left for another go - yipee!)

    Forgot to say, I couldn't get Lime Leaves so used 2 teaspoons from a jar of shredded Kaffir Lime Leaves which I got from a supermarket

    Lovely went down a treat at a dinner party only thing is ive had it many times at our local chinese an it didnt quite match up to theres but a real good effort!!

    This is a 5 * recipe!!! I've made it many times and there's never any left. My children love it as well. Please try it. You won't be disappointed. If you have an Asian shop near you, they often have little packets of frozen lime leaves. I always have some in my freezer.

    Really enjoyed this recipe. I also used dried kaffir lime leaves (4) and served it with stir fried veg and the salad with a mango dip on the side.

    I used this recipe as a base and added some of my own ingredients to turn this into a Thai noodle salad. I added some rice vermicelli noodles, a thinly sliced red pepper, a chopped chicory, a tsp of palm sugar to balance out the fish sauce and lime juice, extra lemon grass and ginger as I adore those flavours, and I left my chillis unseeded as I like things spicy. I loved it, and have brought in some leftovers for my lunch today. Can't wait to tuck in again!

    used turkey mince as i couldnt find chicken. no lime leaves available but used a bit of lime juice. made as a starter for 9 people and we all LOVED it. served only with lettuce. will definatley make again....proper taste of thailand!

    Hands down my favourite Asian chicken recipe. It comes out slightly different evry time I make it, but I love it every time. It is so flavoursome that you keep eating long after you are full and is even good cold. I serve it with wraps to make it more substantial. A definite winner

    really enjoyed this, I made it with turkey mince. I didn't have any lime leaves or mint, so left those out, but also added a splash of soy sauce. Like the idea of serving it with wraps, would probably do that next time.

    Made it with beef mince as I was trying to re-create the beef larp we ate in Laos. There they serve it with sticky rice. Couldn't find any of that so we got some from the Thai restaurant! The dish was pretty authentic tasting. Love it!

    This was such a wonderful dish. I couldn't get hold of fish sauce so i made my own (2 parts soy 1 part lime) and it was beautiful and very authentic. Served with noodles fried off in sesame oil. Wonderful

    very nice but I have put in less fish sauce. 50 ml of fish sauce would have made it to salty for my taste.
