Trout with crisp bacon crust

Trout is often overlooked when it comes to a quick supper but this recipe proves it should be on the weekday menu

Method

  1. Heat oven to 220C/fan 200C/gas 7. Finely chop the bacon, then mix together with the thyme, lemon zest and breadcrumbs. Place the fish fillets in a lightly oiled baking dish, then sprinkle a quarter of the breadcrumb mixture over each fillet.
  2. Arrange the lemon wedges around the fish and drizzle with the oil. Roast the fish for 8-10 mins until it is cooked through, flakes easily and the topping is golden. Serve with steamed veg and boiled new potatoes.

    Enjoyed this very much, easy to prepare. I finished it off under the grill for 3 mins. to crisp up the topping which definatly improved it

    we got some trout in at work for the first time i was asked to come up with an idea for it so i cam on here and filleting fish is easy enough so i thought i would try this out of the 11 servings i sent out i got compliments 7 times and now this has a regular apperance on our specials bored i give it 10/10 (it also got me a pay rise) New potatoes with beans & cress compliments this dish and you can also you the dressing for your fish as well try it

    Quick and very easy to make but it wasn't a hit with me. Wouldn't be in a rush to make it again, would find a different recipe instead when using trout.

    Got two whopper trout today,looking at this recipe its says streaky bacon,would it be better with smoked streaky bacon? as trout can be really bland and this would add some flavour anyone done this?

    Tried this but added smoked chopped bacon, very good. I served it with the creamy potato salad fron another trout recipe. this also worked very well together.

    This is a firm favorite in our house, we use a little more bacon and little less lemon! And I cook the bacon a bit first. Yummy!

    I tried this last night and it was delicious, really easy to make and even my 3 yr old ate it all up. The only change I made was to crisp up the bacon before adding. We had it with ribbon pasta with spinach & pine nuts.

    Used finely chopped chorizo instead of bacon and blitzed up a couple of garlic naan breads for the breadcrumbs. Grilled the whole thing for 7 minutes so the topping was really crispy. Very quick and easy to prepare. I served it with white rice with onion, cabbage and fennel seeds stirred through.
