Method

  1. Preheat the oven to 200C.
  2. Sieve the plain flour, baking powder, salt, cinnamon and mixed spice into a bowl and stir in sugar.
  3. Beat the egg in a measuring jug and add the oil. Continue beating until light and fluffy. Next add the milk and whisk together.
  4. Fold the egg, oil and milk mixture into the dry ingredients. Then fold in the chopped apples. Be careful not to over mix.
  5. Spoon the mixture into muffin tray lined with muffin cases.
  6. Bake for 25 minutes until risen and golden.

    I'm sorry, I have cooked a number of your recipes now and most of them have turned out very well, but I'm afraid I thought these muffins were a disaster. May well be down to me being a beginner at this cooking lark, but I followed the instructions to a 'T' and they came out soggy and stuck to the cases - Perhaps too much apple.

    Very yummy muffins although I did add quite alot more cinnamon as I do love it. Most other recipes for muffins iv tried have been a bit dry or a bit of a disaster so pleased with this recipe.

    Delicious! My 11 yr old made them yesterday morning. We didn't have cooking apples so used two Cox apples instead. The apples were slightly tart and worked perfectly.

    Really sorry, but didn't like these. Been cooking and baking for over 45 years, and one of my specialities is muffins. I was a bit worried that there seemed to be a lot of milk and not much oil, and I watched how much apple I put in because of the previous comment. The muffins were on the dry side and stuck to the paper. Quite embarrassing as I had baked them to be sold for Movember. Oh well - now got a tin full of muffins and some happy chickens!

    Made these with 1/2 c oil, 2/3 c + 200-300 ml milk and 100 g sugar. Also, way less apple than it called for. Not a good beginner recipe. In interesting news, after reading the comments and agreeing on the milk/oil amounts we used 1/3 c oil and 2/3 c + (approx) 100 ml milk, forgot to put the sugar in and got apple bread!

    I make many different cakes & muffins but unfortunately found these so unappealing that most of them were thrown out! They were very dry & most of bottom stuck to the paper cases. Poor...
