Pepper, red onion & goat's cheese frittata

Use up your eggs with this quick, easy and colourful dish - perfect for a quick, no-fuss brunch, lunch or dinner

Method

  1. Beat the eggs and season well. Heat 1 tbsp oil in a small non-stick frying pan and cook the onion and red pepper for 3-4 minutes to soften. Add the eggs and cook for 5-6 minutes until almost set.
  2. Dot the goat's cheese over, then scatter the paprika and herbs over the top and slide under a hot grill for 2-3 minutes until golden. Cut into wedges and serve with salad.

    Very simple and delicious For our taste I added garlic but that only because we are mad on it!!!

    Disappointing. It was quick and easy to make and looked delicious but the overall outcome lacked any excitement. I love goat's cheese and will eat it in almost anything but felt like it was really misplaced in this recipe. The crumbly texture of the cheese just didn't mix well with the smoothness of the eggs. I added garlic and a bit of bacon but still found it very boring. A nice try but I won't be making again.

    I made this for dinner with a green salad and it was absolutely delicious. Dont add anything else, dont try to change the recipe as this one works a treat.

    Looking forward to trying this recipe but it doesn't state clearly if the cheese is soft or hard. It looks like soft in the picture but it would be better if recipe gave better details.
