Pepper, red onion & goat's cheese frittata
Use up your eggs with this quick, easy and colourful dish - perfect for a quick, no-fuss brunch, lunch or dinner

Ready in 15 minutes
- Beat the eggs and season well. Heat 1 tbsp oil in a small non-stick frying pan and cook the onion and red pepper for 3-4 minutes to soften. Add the eggs and cook for 5-6 minutes until almost set.
- Dot the goat's cheese over, then scatter the paprika and herbs over the top and slide under a hot grill for 2-3 minutes until golden. Cut into wedges and serve with salad.
Recipe Extra
Use yellow and orange pepper or substitute other vegetables such as sliced courgettes or mushrooms.
