Creamy courgette lasagne

Method

  1. Heat oven to 220C/fan 200C/gas 7. Put a pan of water on to boil, then cook the lasagne sheets for about 5 mins until softened, but not cooked through. Rinse in cold water, then drizzle with a little oil to stop them sticking together.
  2. Meanwhile, heat the oil in a large frying pan, then fry the onion. After 3 mins, add the courgettes and garlic and continue to fry until the courgette has softened and turned bright green. Stir in 2/3 of both the ricotta and the cheddar, then season to taste. Heat the tomato sauce in the microwave for 2 mins on High until hot.
  3. In a large baking dish, layer up the lasagne, starting with half the courgette mix, then pasta, then tomato sauce. Repeat, top with blobs of the remaining ricotta, then scatter with the rest of the cheddar. Bake on the top shelf for about 10 mins until the pasta is tender and the cheese is golden.

    It's like it say's on the tin"very easy to cook and very very tasty.The only thing that i changed was the cooking time in the oven.10 mins,more like 45 mins.

    Absolutely fantastic! I assembled mine ahead of time using the dried lasagne sheets then when we were ready to eat I heated the lasagne in the oven for 45 minutes. It came out perfectly and was enough to feed 5 adults when served with a small side salad and a couple of slices of garlic bread each.

    I have made this on numerous occasions to use up the glut of courgettes from our allotment. Although we aren't veggies we both prefer this to mince meat lasagne it is much tastier. I'm am planning to serve this and mince meat lasagne for my niece and her hubby this weekend and am hoping to surprise convert them. . . they are sceptical! Also courgette chocolate cake recipe is fab. The courgettes are grated and add moisture to the cake, undetectable . . . even to 'vegiephobes'.

    This recipie is GORGEOUS! I used marscapone instead of ricotta, and added plenty of pancetta. Absolutely amazing, my boyfriend loved it too. Really quick and simple. I used fresh lasagne just because i prefer it. Its going to be a regular favorite.

    I put pesto (about 3 tablespoons - I love pesto!) in the ricotta to pep it up a bit and it was delicious! also meant I could use less cheddar in the recipe - I didn't put any in the ricotta, and just grated some on the top. this recipe is perfect for a courgette glut in the garden too!

    Really great recipe! Easy to prepare, especially with a food blender to grate the courgettes. Probably contains around 3 of your recommended 5-a-day, too! A great twist on lasagne. Even my carnivorous Pa enjoyed it.

    This is a delicious and quick to prepare lasagne! I actually prefer it to the traditional one. I substituted ricotta with mascarpone and I find the taste nicer this way. Brilliant recipe.

    Annoyed because the pasta sheets stuck together while they were boiling in the pan, in future i would just layer the lasagna with the sheets dry and leave it in longer, but it tasted pretty good.

    really nice though needs a lot of seasoning to make it tasty. i usually add mushrooms to the tomato sauce to make it a bit chunkier. also use more layers of pasta to make it more filling and last longer! takes 30 mins in the oven with non pre-cooked pasta sheets.

    I had some courgettes in my veg box and having only tried them once before and disliking them, I decided now was the time to give them another chance! With this recipe, I fried some chopped chorizo before adding the onions. I also used creme fraiche instead of ricotta as it was all I had in fridge. I have to say the results were lovely, my three children agreed. I will definately make this again!

    Tasty and filling. Made my own tomato sauce and used cottage cheese instead of ricotta to lower the fat content. Easy to make and will use the recipe again.

    tried this with homegrown courgettes, was lovely and simple to make. will make again as we have an abundance of courgettes growing!!! even my 9 month old loved it
