Creamy courgette lasagne

Method

  1. Heat oven to 220C/fan 200C/gas 7. Put a pan of water on to boil, then cook the lasagne sheets for about 5 mins until softened, but not cooked through. Rinse in cold water, then drizzle with a little oil to stop them sticking together.
  2. Meanwhile, heat the oil in a large frying pan, then fry the onion. After 3 mins, add the courgettes and garlic and continue to fry until the courgette has softened and turned bright green. Stir in 2/3 of both the ricotta and the cheddar, then season to taste. Heat the tomato sauce in the microwave for 2 mins on High until hot.
  3. In a large baking dish, layer up the lasagne, starting with half the courgette mix, then pasta, then tomato sauce. Repeat, top with blobs of the remaining ricotta, then scatter with the rest of the cheddar. Bake on the top shelf for about 10 mins until the pasta is tender and the cheese is golden.

    Anyone got a suggestion for an alternative to Ricotta? Can't get it here in Yemen but would love to try this as we have the most delicious courgettes out here.

    This was very easy to make, except that I had the lasagne sheets sticking together in the pot, so next time I would just bake this for longer. I used Ricotta which is ridiculously expensive here in Iceland, so I think I might use something else next time, such as mascarpone or even Philadelphia. Surely a recipe one can play around with and make even yummier.

    a twist on a favourite by using grated courgettes. To make lower fat version I used quark. and made my own tomato sauce. It was extremely filling and we liked it enough to want to repeat on another occasion. Served with salad and potato wedges.

    Easy and delish. Though my partner was upset at first it wasn't a meat one - he wolfed it down and said it was great. I halved quantities for 2 people apart from the pasta sauce - I used the whole jar - I think it needed it.

    Fantastic - I've fed it to several people who have all turned their noses up to the name and green colour but have certainly wolfed it down after they tried their first bite!

    gorgeous! had a tough time separating the lasagne sheets but was well worth it. used my magimix to grate the courgettes - probably saved a lot of time!

    Made this several times last autumn when we had a glut of courgettes and looks like I'll be doing the same this year! Very tasty and straightforward. I used dried lasagne sheets that didn't need precooking and gave it about 30 mins in the oven.

    Really lovely recipe and makes a change to the usual meaty version. Tip: Use fresh lasagna sheets - this saves on step one and will improve the taste. If done as mentioned in step one the lasagna sheets are sticky and stodgy!

    Anyone know if I could prepare this dish and then freeze it BEFORE the final cook through?? Have a glut of home grown courgettes, so want to make one for eating in the next few days, and one to freeze to be defosted then cooked through at a later date.... Any advice appreciated!

    Made this last night, using fresh lasagne, homemade tomato sauce, homegrown courgettes and added some smoked bacon lardons. I also sliced some of the courgettes instead of grating them all - as suggested by other posters. Absolutely gorgeous!! The only problem was - we managed to scoff the lot between two of us!!

    Made this a couple of weeks ago but threw in extra peppers and other veg as I didn't have enough courgettes - my husband absolutely loved it and said it was one of the tastiest meals he's had!

    We needed something to do with our glut of courgettes (and I don't particularly like them anyway). This turned to be a fabulous recipe. As others have said, it didn't look too apertising as I made it but when it was cooked we loved it.

    My kids loved this dish and they are not that easy to please! I cooked the courgettes, onion & garlic first then blended it and put it back on hob adding Lloyd Grossman's Tomato and Mascarpone Pasta Sauce.
