Sausage, mushroom & tomato pasta

An easy supper to throw together last minute, if you have more time make the sausages into meatballs

Method

  1. Cook pasta according to pack instructions. Heat the oil in a deep frying pan, then fry the sausages and mushrooms for 5 mins until golden. Add the tomatoes and cook for about another 3 mins on a high heat until the tomatoes pop and start to form a sauce. Season to taste, then add the herbs and drained pasta and stir well.

Creamy mustard pasta with sausage meatballs

Squeeze the sausagemeat out of the skins, then roll into small balls with your hands. Fry with the mushrooms as before until golden, add the tomatoes, then fry until they have just softened, rather than popped completely. Add 3 tbsp crème fraîche (or more if you like) and 1 tbsp wholegrain mustard, then heat until the sauce is hot through. Season, stir in the flat-leaf parsley and serve with the drained pasta.

Lower fat

You can use reduced-fat sausages if you want to cut the fat content of this recipe.

    I have a similar recipe that takes 2 hours to make but is obviously much more complex but this is great as an quick meal.

    Made this for friends and there wasn't a bit left! We used sausages with a hint of chilli for a little bit of a kick. Will definatley be on our table again!

    I took out the tomatoes and just added some chicken stock to make a sauce. It lasted about five seconds before my kids and husband devoured it.

    A very simple and fast meal especially as I subtituted a jar of german Bockwurst sausage for speed. Tasty and filling when you are in a hurry.

    After long day at work this pasta was very easy and quick to make. I used pepperoni sausages and mixed and dried herbs instead of parsley. My boyfriend (who is not a big fan of pastas) liked this very much. Glass of red wine, feet up and telly on... ah, relaxing and filling!

    Im going to try this tonight, the sausages we will be having with it are Pork, parma ham, garlic and red wine. Should go lovely with this. Will come back tomorrow to let you know how it went....x

    Made this last night as in a hurry, I finely chopped some red chilli and rosemary and combined it in the sausage meat, also used creme fraiche and mustard, totally awesome!!!

    I made this last night for me and my fella, it was absolutely lovely and soooo easy to make. I halved all the ingredients as i was cookin it for two. My fella isnt too keen on Rosemary so i only added half a stalk. I would definitely make this again, and will keep it in my binder for easy access.x

    I put a tin of chopped tomatoes in a baking tin with a crushed garlic clove and the chopped rosemary and baked on high for 20 mins for a quick concentrated sauce and then added it to the mushrooms and cherry tomatoes. It was very good and added a little extra sauce.
