Apple & mint sorbet

Method

  1. Put the sugar in a small pan with 150ml water. Heat until the sugar has dissolved then add the mint. Leave to infuse for 20 minutes. Strain and add to the apple and lemon juice.
  2. Pour into an ice-cream maker and churn to a sorbet consistency

    Used green apple but it turned brown before I could mix it and when it came out of the ice cream machine it looked more like chocolate ice cream or really cold apple sauce.

    irenek, have a bowl of cold water with a good splash of lime/lemon juice- add the apple pieces as you cut them; the acid prevents them oxidising and turning brown whilst you prepare the rest. :)
