Rocket & courgette soup with goat's cheese croutons

This seasonal soup is packed full of goodness, and every spoonful will bring you a taste of spring

Method

  1. Cook the onion gently in the olive oil or butter for 5-10 mins, until soft. Add the potato and cook for 5 mins, then add the courgettes, rocket, stock and plenty of seasoning. Bring to a simmer and cook for 5 mins, until the courgettes feel soft. Whizz the soup in a blender, or use a hand blender, until smooth. Return to the pan and keep warm.
  2. Toast the baguette slices, spread each with a little goat's cheese, then grill if you like, or serve as it is with the soup.

    this recipe made enough for about 6 or 7. i recommend cutting everything by half. and was so bland i needed some dried chilli on top

    I did this recipe for dinner and I have to say that I really liked it, only the next time I would put a bit more rocket to give more flavour. The taste was indeed delicate, so is good for the people that don't particularly love vegetables. Because I love vegetables I will add more rocket. I will do it again for sure!

    I have used up some of my home grown courgettes so I know this is going to be healthy. Also used a parmesan cheese rind during cooking to add some depth to the flavour. With plenty of seasoning this tasted really good; will be putting some in the freezer for some warming soup in the winter!

    I tried this for the first time last night and took on board some of the suggestions, so added a fresh chilli to give it a bit more taste and it was wonderful! Really good, easy recipe and a great way to use up excess courgettes, will be making it again!

    I made this soup ( but without the croutons ) for my lunch today and found it very tasty. I will definitely make it again, especially as it a useful way to use up the glut of courgettes in the garden.

    Made this today with rocket and courgettes from the garden, but upped the amount of rocket to 300g because I have so much. Came out very well and it's in the freezer now.

    I loved this soup. Quick and easy to make and a great way to use up my surplus of home grown courgettes and rocket. I will definitely make more and freeze for using in the winter...

    Made this soup last night as have loads of home grown courgette to use up! I added 2 chopped garlic cloves to the pan with the onion and stirred through grated parmesan at the end for extra flavour. It was yummy but could have been too bland for my taste without my added ingredients!

    Excellent, Used chicken stock instead of the veg stock, added 2 cloves garlic, 2 small chillies and a bit of parmesan, really nothing like the original but really good and would definitely make again.

    I pan fried the onion, cougette and addedd some garlic to give colour and a bit more flavour, then added it to the stock with the pots and simmered until soft - just stirred the rocket through just before blitzing! Very yummy - maybe not tasting of courgette but very nice!
