Chocolate cake

A reliably good buttercream sandwiched between two layers of gratifyingly chocolatey sponge makes this close to the perfect cake

Method

  1. Heat the oven to 160C/fan 140C/gas 3. Line a 20cm x 20cm square cake tin.
  2. Mix the flour, sugar and cocoa together in a bowl. Melt the chocolate and butter together with 200ml water in a pan and then beat this along with the eggs into the dry mixture. Pour into the cake tin and bake for 1 hour or until a skewer comes out clean. It may crack a little on top but this will be covered by the icing. Cool.
  3. To make the icing, melt the chocolate with the cream and butter until smooth and then cool to a spreadable consistency, beat in enough icing sugar to make the icing opaque and stiff.
  4. Slice the cake horizontally into 2 or 3 layers and spread some icing between each layer. Ice the outside of the cake in a thick even layer and smooth the icing down as much as possible, don't worry about the top too much.
  5. Dust with cocoa powder just before serving.

    I agree with most of the negative comments about this recipe. I followed the recipe to the letter. The top of the cake almost explodes making it impossible to ice. The icing doesnt set more thickly than ketchup. I added another 150g chocolate and 100g icing sugar and put the icing in the fridge. It is still syrupy. I don't believe the photo shows this actual recipe. Very disappointed with the result especially since the ingredients were expensive. Yes, the house smells of chocolate, very appetising, but this cake is rubbish!! Several BBC recipes fall very short of expectations. Eg Irish soda bread doesnt rise unless you turn the oven up to gas 8 for the first half of the bake. Scones? They just don't rise either!! With all theses celebrity chefs, I bet not one of them can cook even a decent fry-up. I shall buy a good old fashioned 'good housekeeping' recipe book. The BBC should stick to what they know!! Game shows!!

    I am absolutely livid!! I would love to sue you idiots for wasting my time and money on this lousy and untested recipe!! I took photos of this wretched cake. The icing just dribbles out everywhere!! Where can I send them so all can see how you wasted our time?

    thought this was going to be too rich or too 'brownie'like' but was perfect! Very easy to make and didn't crack much. Added more butter to the buttercream as it was a bit runny. Halved the recipe and made 2 cakes; 1 in small tin and one in loaf for 2 diff friends: was told by both it was 'the best choc cake they had ever had!' Took longer to cook than stated but I just kept sticking skewer in until it came out clean. I'm making this again tonight for another friend's birthday!

    Forgot to add I used Bournville choc, find it is the best chocolate to use in cakes, higher cocoa percentages make it too rich. This was the most professional looking cake I've ever made, not convinced my friend's believed I hadn't bought it!

    This is a simple recipe, and it doesn't seem as hard as it sounds. The icing layer was quite thick when it was ready to eat, but I'm still going to bake it in future.

    Really tasty cake, very chocolate-y! Did crack on top but what it lost in looks it made up for taste. I did not try the icing due to all the negative reviews so filled it with chocolate fudge icing instead (melt 50g butter in a pan, then add 25g cocoa powder and heat for 1 minute/then take off heat and stir in a couple of tablespoons full of milk or cream and 8oz sieved icing sugar). LOVELY!

    I used a round 8in cake tin and used only dark chocolate.It was very easy to make but took 2 hours in my oven and needed more time i think as the texture in the middle was different to the texture around the middle.Quite large cracks did form in the oven however when it'd cooled down the cracks pretty much dissapeared.As for the icing, I let it cool for 11/2-2 hrs and it was fine(and yummy!) I think it's not suppose to set rock solid as most expected as it is rather like a mousse like u get on gateux.It was very popular with my family paticlarly my little brother who had 3 slices in the same day.I found it nice but a little too sickly for the small slice i had.It also looked quite professional which was good.I would make this again as it was a hit with my family.

    Just made this, haven't tasted it yet but i made the cake last night took 1hour 20 mins in fan oven, came out lovely slightly cracked on top.I let it cool then wrapped it in foil and left overnight. I made icing this morning let it cool for 2 hours then mixed with 200g icing sugar, left it to stand for 5 mins then beat it again by which time it had stiffened up .Then iced cake and put it in the fridge just checked it now (2hours later) and icing has hardened nicely enough for me to write on it .I will let you know how it tastes later (its for daughters birthday).

    This is quite a heavy moist cake and a little on the bitter side because of the amount of Dark Chocolate in the actual cake mix. Not quite as sweet as I or my family would like but the icing does help a little bit. Rather than slice the cake in half to ice, I just iced the outside. I also only used 200g of Chocolate but used 100g of dark and 100g of milk and then 140ml of single cream to make the icing and then just kept adding icing sugar until I got a lovely thick consistency. Mine cracked on top too but you can hide that with the icing really easily! Can't decide whether to give this 3 or 4 out of 5 stars???

    I found this easy to make and was delicious and moist, rather like a muffin texture, i went wrong on the icing though!! as i used normal milk chocolate instead of cooking chocolate, which made my icing rather runny.

    I wanted to make a birthday cake for my nephew and thought I'd give this a trial run. It did take 1.5 hours to cook - but everyone loved it and my nephew (3) actually licked the plate and asked for seconds. It is like a big brownie cake (and will crack on the top) and my advice about the topping/filling is that you must leave it alone in the fridge for about an hour before using it otherwise you'll have a runny mess. It will stiffen up if you have a little bit of patience. A real winner of a cake - but it is rich and dense, it is not a light sponge - so bear that in mind - but a 10/10 rating all the same!!

    I made two off these cakes for my son's 6th birthday and decorated it with Lego figures. Everybody absolutely loved it. Have bought all the ingredients to make another one. Tasted really chocolatey and more like a brownie.

    The sponge was good but the icing wasnt! It came out like a sauce so I decided not to use it. The cake also took ages to cook, over an hour. I dont think i will be making this again.

    I made this cake yesterday for my son's birthday. It cracked quite badly on the top. Also, I had great trouble with the icing. It just wouldn't set enough to spread properly. Consequently, it went on and then fell off. Added some jelly beans to jazz it up a bit and the end result was a bit of a car crash. I think it will taste lovely though!
