Chocolate cake

A reliably good buttercream sandwiched between two layers of gratifyingly chocolatey sponge makes this close to the perfect cake

Ready in 1 hr 30 mins, plus cooling
  1. Video tutorial: Melting chocolate

Method

  1. Heat the oven to 160C/fan 140C/gas 3. Line a 20cm x 20cm square cake tin.
  2. Mix the flour, sugar and cocoa together in a bowl. Melt the chocolate and butter together with 200ml water in a pan and then beat this along with the eggs into the dry mixture. Pour into the cake tin and bake for 1 hour or until a skewer comes out clean. It may crack a little on top but this will be covered by the icing. Cool.
  3. To make the icing, melt the chocolate with the cream and butter until smooth and then cool to a spreadable consistency, beat in enough icing sugar to make the icing opaque and stiff.
  4. Slice the cake horizontally into 2 or 3 layers and spread some icing between each layer. Ice the outside of the cake in a thick even layer and smooth the icing down as much as possible, don't worry about the top too much.
  5. Dust with cocoa powder just before serving.

    Have just made this cake and the recipe did say there may be cracks on the top but there are massive caverns! Anyone have any idea why?? I'm making another one tomorrow as I have to take cake into work on Monday as celebrating several people's birthdays! So, will make another of these and also ice both tomorrow but any comments on what I could have done to have such massive caverns on top of the cake? Me or the oven?!?!

    This is the best chocolate cake ever!!!!! I have made and iced two in the last week and everyone at work thought they were fantastic. The cracks on top of the cake "calmed down" once the cake had cooled. This recipe is so quick and easy - it has to be for me to have done it!!! I'm going to make one of these whenever I need to take something to a celebration party!

    Had a bit of trouble with this one let's just say I'm no good with icing and my cake ended up looking like it was residing in the bog of eternal stench. However we found that (as my icing was runny) if we heated up each slice for about 30 seconds in the microwave as we ate it it was an absolutely lovely treat on a cold winters day. Oh and the reason my icing went wrong was because I didn't whisk it properly ah well you live and learn.

    I found the sponge quite easy however it took ages to cook about an hour and a half, but I did use round tin cos I couldn't find my sqaure one. I had the same problem with the icing mine was just a chocolate sauce which was nice but so messy. I think I added the icing sugar when the mixture was too hot. I will try again and be more patient!!

    I don't understand it, because everybody is raving. But I threw mine away. It tasted horrid. Verry, verry bitter. Maybe I used the wrong chocolate, to dark perhaps. Also I only had three egs, so I used one less, but that wouldn't make it tast bitter, would it? I don't know. Let's blame it on Dutch chocolate and cocoa.

    My cake wasn't as successful as everyone elses, it wasn't very cake-like really. It was more of a really dense brownie texture, and it was really weighty! I'm not sure what went wrong. It did taste lovely, but if I make it again I'll say it's chocolate brownie!

    I've just made this chocolate creation.... WOW... what a delectable smell from my kitchen! I agree with one of the other commentors that it took approximately 15 minutes more than the hour suggested. I too have a large crack in the top of the cake but I think that gives it character and icing will be over the top when cool anyway. Well, I don't think there will be any hesitation in cooking this again - great party cake! Yum! Lxx
