Gumbo-style chicken

Method

  1. Season the chicken then brown in 2 tbsp oil until golden. Scoop out of the pan. Add the bacon and cook till crisp, then add the onion, garlic and celery. Cook until softened and starting to colour. Sprinkle over the flour and cook, stirring until the bacon, veg and flour turns golden. Tip in the tomatoes and break up with a spoon, and keep stirring till everything is combined. Stir in the stock then add the pepper, herbs, cayenne pepper and sausage. Add back the chicken. Season really well.
  2. Simmer for about 30 minutes until the chicken is really tender and the sauce reduced. Serve with crusty bread.

    Cooked this for dinner this evening and my husband loved it :-) Added half a teaspoon of paprika as I didnt have the pepper and also some cumin. It was so tasty and easy! Also left it cooking for an hour and a half. The chicken was so tender. Yum. Definitely having this one again

    Great flavours, a touch on the spicy side for me so I think I will decrease the cayenne to a half teaspoon when I make again.

    Very nice and we all like spicy food but even myself and my husband found it too hot. Either half the cayenne pepper or let people add creme fraiche or soured cream to taste.

    It was a winner for my family: two todlers finished their portions and asked for more. It was first time I cooked with kabanos. M-m-m-m-m! relly nice! As some other revieers with children I used paprika instead of cayenne pepper.

    Really easy and tasty! Made it for my boyfriend and a couple of friends with warm crusty baguette and it went down really well :) even with hard to please boyfriend!

    Really nice flavours, used 1/4 tsp of cayenne instead of 1 tsp due to comments on here but would try 1/2 tsp next time. made the mistake of making the Gordon Ramsey bubble and squeak cakes also on here to go alongside but each recipe was really good on its own right so were competing with each other. Would def make again with some couscous or rice.

  • 4 skinless chicken thigh fillets, cut into chunks
  • groundnut oil , or other flavourless oil
  • 2 rashers smoked streaky bacon , chopped
  • 1 onion , finely chopped
